Restaurant Style Chicken Nachos

Really good & different. I halved the recipe & only used 1 teaspoon of oil. I used the microwave instead of heating the oven. I added sliced jalapenos and sour cream. Loved the addition of green onions.

Best Spanish Rice

This was delicious. The only adjustment I made was to use Rotel in place of the salsa. My husband is not a big spanish rice fan, and he had two helpings!Wonderful recipe, and I thought reviewer Karen H gave some very helpful tips. Thanks for sharing your great recipe, ilovetocook!

Potato and Cheese Frittata

I made this using one potato and 7 eggs and a combo of butter & olive oil. I used dried onions and onion powder instead of an onion and sprinkled parmesan, mozzarella & colby-jack cheese on top. Made a very nice dinner with homemade toasted bread & a jello salad.

Jenny's Black Forest Cake

I made this into cupcakes, and it was tender, moist, & delicious--not too sweet & very chocolatey. I will definitely try it as a layer cake, using the cherries.

Orange Spice Cake

This was very good--very much like gingerbread in taste & texture. My only changes were that I doubled the recipe, used dark corn syrup (I was out of molasses), and I added a little salt & a little extra sugar. Didn't use the orange marmalade glaze. Next time I'll definitely use molasses, because I think it adds depth and richness. Great recipe!

Hard Chocolate Glaze

After I saw a photo by misserin13, who used this glaze for cupcakes made with Dark Chocolate Cake I, I had to try it. The glaze is everything that previous reviewers raved about. It sets up to a beautiful, shiny, firm but not crackly, and delicious, but not-too-sweet glaze. I combined squares of semi-sweet chocolate with milk chocolate chips, and I used a mix of salted & unsalted butter.

Hot Fudge Sauce II

Although I modified the recipe by using bittersweet chocolate chips, brown sugar, and half & half, it made a smooth, chocolatey, just-thick-enough sauce--perfect for our vanilla bean ice cream. Thanks for sharing your Mom's recipe, Erin, and I'd be interested in your recipe for "Eskimo Pie Delight"!

Awesome Grilled Cheese Sandwiches

An easy & un-messy way to make grilled cheese. I used Light Oat Bread from this site and Tillamook cheddar cheese. I liked the different kind of crispiness that baking lends to the sandwich, and the cheese melted nicely with some little drips off the side of the bread--YUM!

Light Oat Bread

I was looking for an oatmeal bread recipe when I saw JennyAnn's beautiful photo and that made my decision easy! I made the recipe manually instead of in a bread machine; other than that I didn't change a thing. My loaf looks very similar to the photo, and the taste is delicious. The oats give the crust a nice crunch and add a nuttiness to the flavor. This is a really nice recipe!

Peppermint Brittle

Easiest candy ever! I used a combo of white chocolate & almond bark. I took the advice of other reviewers & used the bigger pieces on top & mixed the "dust" into the melted white chocolate. I'd like to try it with a semi-sweet layer as others did. Makes a very nice gift any day of the year but especially at Christmas.

Crabbies

I haven't made these in ages, and I had forgotten how good they are! All I could find at the store today was garlic cheese in the 6 oz tube, so I used 5 oz of that, and I subbed butter for the margarine. Before broiling them, I baked for about 5 minutes in a 425 oven on the lowest rack, just to crisp up the bottom. I think it would be even better with the sharp cheese as stated in the recipe, but we couldn't stop eating them!

Creamy Chicken and Wild Rice Soup

I made this for a neighbor and for convenience used cream soup instead of making the roux and added about a half cup of sour cream at the end. I had a taste and gave my Mom a tiny bowl, and she declared it the best chicken soup ever--now I need to make it for us!

Pumpkin Honey Pie

Very rich & yummy. I used Pumpkin Honey from Flying Bee Ranch and subbed eggnog for the liquid, so the flavor was a little different than the traditional pumpkin pie. Also the texture was a tad more substantial than usual. We really enjoyed it.

Chicken or Turkey Tetrazzini

We really liked this dish. I used leftover turkey & followed the suggestions of previous reviewers & added ham, sour cream, & parmesan. I only had one can of mushroom soup, so I made a white sauce with cream cheese. I had to put this in a 12X18 pan because it made tons. After we stuffed ourselves, I froze 2 dinner-sized portions. It's a good recipe because you can do so much with it, plus it tasted great!

Apple Crumb Pie

I left out the walnuts & raisins, and this was a good apple pie, just not the best I've had. The crumble didn't crisp up much for me, and (believe or not!) I thought it was a little too sweet. I still managed to eat 2 pieces--all in the name of research, of course.

Golden Pumpkin Rolls

I love the spices in these rolls--they are perfect with the pumpkin but not overpowering. I subbed cardamom for the cloves and threw in a dash of cinnamon. I didn't read the recipe right and only used one package of yeast, so the rolls were a little dense. I will make another batch tomorrow (using the correct amount of yeast!) & freeze them for our Thanksgiving dinner.

Tater Tot Bake

This was good, comforting, man-food--my husband loved it. I thought it was surprisingly tasty. I added half a red bell pepper and 8 oz of American cheese. I just mixed everything together, put the tots on the bottom of the baking pan, and poured the beef/soup/cheese mixture on top. An extra sprinkle of cheese and buttered bread crumbs made a nice crust. I served this with Buttery Cooked Carrots and Michelle's Famous Washed Cranberry Sauce, from this site.

Buttery Cooked Carrots

I loved these carrots--the simple ingredients and cooking method made them nutty and slightly sweet with just a tiny crunch. I used 1/4 cup brown sugar and 2 tablespoons butter. Great recipe!

Michelle's Famous Washed Cranberry Sauce

This is a good recipe--not too sweet, and I like the combo of white & brown sugar. I always cook my cranberries until they pop & the sauce thickens, so that takes far longer than 5 minutes. I thought the sauce tasted a little acidic, so I added a teaspoon of vanilla, and that made all the difference for me.

Pecan Pear Bread

I made this as a cake in an 8 X 3 cake pan, and we loved it. A little like apple cake in texture but a more delicate taste. The cardamom is the perfect touch--it really makes the cake. I used 2 Bosc pears, and the only change I made was to use plain yogurt instead of sour cream. I will definitely include this excellent recipe in my holiday bread baking!
