J.P.'s Big Daddy Biscuits

Reviewed: Jun. 3, 2011
These were a lot like Grands. I served them with butter and peach preserves, and they complemented our dinner of smoked pork chops and cole slaw very nicely. I used part butter and part butter-flavored shortening. I agree with Discobunny that the baking powder flavor is dominant.

Hot Fudge Sauce

Reviewed: May 14, 2011
I think this is the most delicious (and easiest) fudge sauce I've ever made. I used low-fat condensed milk and a combo of bittersweet and semisweet chocolate chips, because I did not have baking squares. While it was still warm, we spooned it over Blue Bell Vanilla Bean ice cream and topped it with toasted pecans and were in heaven!

Green Bean Fries

Reviewed: May 3, 2011
We have these at TGI Friday's and decided to try them after finding haricots verts at Sam's. The result was very close to Friday's - tender and crispy. My only changes - I did not cook the beans first, left out the chili powder, used fresh bread crumbs, and added salt - you really do need some salt. I also sprinkled them with shredded Parmesan before I served them. The bread crumbs make a light, crispy crust - much better than just flour - and although I liked the fresh bread crumbs I used, I will try Panko next time. I made fresh buttermilk dressing for a dip and added horseradish to mine.

Three-Berry Lemon Trifle

Reviewed: Apr. 7, 2011
I offered this as a lighter dessert choice for a church dinner, and it was more popular than the chocolate sheet cake! I used vanilla yogurt and the juice of a meyer lemon, made it in a large baking pan instead of a trifle dish, and I did not have room for more than 2 layers of fruit, so I used strawberries and blueberries. The "pudding" from the condensed milk and yogurt makes a delicious combination with juicy fresh fruit and angel food cake. No one could believe it was low-fat!

Mom's Turkey Sausage Patties

Reviewed: Apr. 4, 2011
I prepared this sausage to use in a sausage breakfast casserole for a brunch. One person in the group did not eat pork, and one was allergic to nitrities, so this recipe allowed everyone to enjoy the casserole. I tried it out first on my husband, who loves pork, fat, and nitrites ;) and he declared it "excellent". I don't think I will buy sausage at the store again. I quadrupled the recipe and heeded the suggestions to double the seasonings, although I did use crushed red peppers instead of cayenne, and I did not use all the salt or pepper. The result was savory, lean, and delicious! I would say to those that find it too dry to be sure to use ground turkey and not ground turkey breast.

Sopapilla Cheesecake Pie

Reviewed: Mar. 31, 2011
I quadrupled this and served as dessert to a Mexican dinner at my church. It was rated "excellent" by the group with requests for the recipe. I added eggs to mine (one per recipe), and I liked the texture. I also used Mexican vanilla. I had a bite before it had cooled as well as a little piece after it had sat for 4 hours, and I much preferred the cooler version. I drizzled honey all over after it came out of the oven, and I think it adds that necessary flavor for sopapillas. :) I see that the previous reviewer mentions the availability of sheets, and I will certainly look for those next time, as it was a little tricky getting the dough to cooperate.

Irish Cream Bundt Cake

Reviewed: Mar. 25, 2011
Pure delicious-ness. The Irish cream really flavors the cake. My changes were to use coconut oil instead of vegetable oil (I was out) and macadamia nuts instead of pecans. I only had 1/2 cup of Irish cream, so I added 1/4 cup Buttershots. I followed the instructions and my cake baked and rose beautifully. I halved the glaze, and we loved the crunchy crust it made.

Black Bean Vegetable Soup

Reviewed: Mar. 10, 2011
I quadrupled this as a choice for an Ash Wednesday soup dinner at our church, and it was delicious. The people that tried it came back for seconds, and it is a recipe that I will definitely make again. I love that it doesn't need salt and is a true vegetarian soup. It was perfect for those that were giving up meat for Lent - very hearty and satisfying.

Cheesy Ham and Hash Brown Casserole

Reviewed: Mar. 10, 2011
I left out the ham and made this for a side dish at a church dinner, and while the group loved it and some requested the recipe, I found it to be a little dry. If I make it again, I might add some milk.

White Chocolate Cherry Pecan Cheesecake

Reviewed: Mar. 3, 2011
I made 3 of these for a church dinner, and people were grabbing them up before they got their dinner plates. ;) I loved the ease of mixing it up and the fact that it had no added sugar. I used roasted salted pecans and would proabably use unsalted next time, since I used salted butter in the crust. It makes a beautiful presentation, and the white chocolate and pecans really make this a special cheesecake.

Easy OREO Truffles

Reviewed: Feb. 28, 2011
These were easy to make and a big hit at a church reception.I left out the 9 cookies to crush for crumbs and drizzled white chocolate over the tops instead. My dough yielded 40 balls.

Banana Slush Punch

Reviewed: Feb. 28, 2011
Although I'm not crazy about banana flavor in my punch, when I served this at a reception at church, everyone loved it. When I was trying to refill the bowl, people were barely containing their impatience to get to the slushy bits. :) I put mine in shallow containers to freeze. After letting the frozen containers thaw about 2-3 hours, I took a knife and sliced through the slush to make smaller pieces so everyone could get some of the slush in their cup.

Meyer Lemon Martini

Reviewed: Feb. 6, 2011
What a great way to start our Super Bowl party for two! ;) We added just a tad more sugar, due to the tartness of our meyer lemons, and because we are hard liquor wusses, I only put in one ounce of vodka. It is DE-LISH!

Smoky Chicken Spread

Reviewed: Feb. 5, 2011
I left out the celery, added chopped dill pickles, and used honey mustard instead of honey. Very tasty, either as a sandwich or a cracker spread - the smoked almonds are a fantastic addition.

Coconut Cream Pie I

Reviewed: Jan. 20, 2011
This was a quick, easy, and surprisingly tasty fix for coconut cream pie for a crowd. I quadrupled the recipe for a church dinner, and several thought it was from scratch. I used coconut cream flavored instant pudding mix, but I think the vanilla flavor, as stated in the recipe, would be much better. I toasted some of the coconut and sprinkled on top.

Banana Trifle

Reviewed: Jan. 20, 2011
I quadrupled the recipe for a church dinner, and I thought it tasted good, but I would recommend using vanilla pudding mix instead of banana flavor, which to me has an odd taste. I used Cool Whip instead of real whipped cream, and I did not use the vanilla wafers. It was an easy dessert to serve to a crowd, and I liked the pound cake as a base. I added caramel sauce to the layers of pound cake and drizzled it on top.

Chocolate Cherry Cake III

Reviewed: Jan. 4, 2011
Even though I normally make cakes from scratch, I tripled the ingredients for 50 servings for a church dinner, and people were begging for the recipe. I have to admit, it was delicious! Very easy to make even when tripling the recipe.

Chocolate Toffee Crunch Bars

Reviewed: Dec. 31, 2010
These were not quite as good as I thought something with large amounts of butter, sugar, chocolate, and nuts should be. :) Even my husband, who loves all those ingredients, just said that they were good. We prefer the toffee crunch with graham crackers.

Egg Noodles

Reviewed: Dec. 31, 2010
I made these noodles for chicken noodle soup, and my husband really liked them. I followed the instructions but thought they were a bit thick and not as tender as I prefer. Still haven't found a recipe like my grandmother used to make!
