Black Bean and Rice Enchiladas
We are a very meat and potatoes family but I am trying to get us to eat better so I tried this recipe. It was amazingly good! Even my 2 little boys loved it. I did add some frozen corn and used salsa instead of picante. Will definitely make again!

Steak and Ale Pie with Mushrooms
We enjoyed this. Five year old wouldn't touch it but 8 and 2 year old enjoyed it. I thought the ale flavor was a bit strong (I don't like beer) so next time I will do 1/2 beer, 1/2 beef broth. I'm sure DH will be happy to 'dispose' of the extra beer! Did add carrots.

Cheeseburger Noodle Casserole
Made with rotini and 1/2 package onion soup mix. Was okay - we ate it but no one loved it.
