Day two I switched it up a bit. Added peanut butter and almond butter and some kosher salt. Extra coconut and some cayanne. Left the oranges in to the simmer, and added spinach. Paired with some grilled flatbread, and served as a stew, it passed. And, I did add a portobello mushroom at the end, stemmed and gilled for a little twist. Mhhmmmmm. PASS.
