I am currently pursuing a PhD in Music History, and love the extra time my degree offers me to cook for my beautiful wife of (almost) 4 years!
My favorite things to cook
I love to make spicy foods: curry, Mexican food, Southern dishes like jambalaya, etc. I'm also a great baker, and am always coming up with new cookie recipes!
My favorite family cooking traditions
My mum taught me how to make cookies, and I have been improving on her recipes since I moved out on my own. My dad also makes his own eggnog from scratch every Christmas, and it is outstanding!
My cooking triumphs
I made a wassail for this past year's Christmas party and it was a huge hit. I also made all of the appies and desserts myself (with some help from All Recipes!), and had numerous requests for recipes. It's so much more rewarding than just reheating store-bought purchases!
My cooking tragedies
I once tried making ribs, and somehow got the measurements wrong. I put in far too much paprika, and neither my wife nor I could eat the ribs. We tried, since ribs are so expensive, but they were terrible!

Banana Cake VI
I am so glad that I tried this cake, as the tip about putting the cake in the freezer after baking is genius. This makes an incredibly moist cake, but make sure you use over-ripe bananas for the best results. I've also started using low fat (and even ultra-low fat) cream cheese in the icing to reduce the total fat content a little, and it tastes exactly the same! I may experiment with some chocolate chips in the future, but this cake is near perfect the way it is. Oh, and I bake this in a ceramic cake pan, like the kind you'd make lasagna in, and it comes out beautifully.

Spinach Dip with Water Chestnuts
Simple and effective. For a twist, I took out the vegetable soup mix and water chestnuts, and added feta cheese and roasted red pepper. I served the dip with homemade pita chips (pita bread cut into triangles, tossed with coarse salt and olive oil, and baked in a 350F oven for about 10 minutes), and it was a huge hit!

Cranberry Meatballs
I made this for a Christmas party a couple of years ago, and had numerous requests for the recipe! I am about to make it again for a potluck, and am going to take the recipe along with me, as I am sure I will have requests again! Easy to make, and you can substitute pre-made meatballs into the sauce for a quick fix! OK, so I tried using pre-made meatballs, and it was a failure... I needed a big batch, so used some pre-made and some homemade, and everyone fished around for the homemade!
