Connie's Zucchini 'Crab' Cakes
YUM! I used my food processor to shred the zucchini, doubled the amount of Old Bay and used chopped red onion. Put it on a Light hamburger bun w/a homemade thousand island dressing. For someone on weight watchers, this was a satisfying, almost indulgent meal. Will definitely make again.

Summer Squash Pizza Crust
I used 2 9" cake pans instead of the jelly roll pan. It makes it cook more evenly and makes it look more like a pizza crust.

Chicken Corn Chowder
I added mashed potato flakes to thicken it up a bit and used fat free half & half. Canned corn also works just as well.
