Cranberry Pistachio Biscotti

I was so skeptical when the dough was so loose and wet, but, the cool water on my hands worked well to shape the logs. They spread on the sheets, but, once baked, turned out perfectly! I love, love this recipe and can't wait to experiment with other flavors. I'm thinking of trying to subsitute some of the flour for powdered baking chocolate.

Bread and Butter Pickles II

This was my first attempt at pickles, and I am thrilled. I used regular sized cukes from the local farmers market, so it made 25 pint jars! I used red peppers because I prefer them. I had to triple the brine to cover all the veggies. I assume pickling cucumbers would yeild less, but I am happy with results. Next time I think I'll add some banana peppers in the mix. I also reduced the sugar by about a cup and the sweetness was perfect!

Chewy Granola Bars

Yummy! I love these! I followed the recipe pretty closely, using a tad less butter, adding dried cranberries and blueberries and only a bit of chocolate chips. I used clover honey and added some sesame seeds as well. Turned out great!

Toasted Pumpkin Seeds with Sugar and Spice

This recipe was perfect! I needed a quick snack to take to a friends house and (along with a bottle of wine) I had all the ingredients. Wow! Terrific, sweet, crunch, salty snacking! I had a bag of raw, organic pumpkin seeds in my pantry and I wasn't sure how I was going to use them, so this recipe gave me my solution! Simple and delicious!

BLT Dip

I made this dip without reading through all the suggestions. I worried that I had added the bacon in pieces that were too large, so I threw the whole deal into the food processer and pulsed a few times. I put it back in the fridge to get cold, and served it topped with some chopped tomato and scallion. Turned out great!!! Pulsing it together also made for a lovely pink-tinged color.

Shrimp Scampi Bake

This was fantastic! I thought the addition of the Dijon mustard was excellent....added a subtle tang that made the dish special. I will keep this recipe and share it with friends as well!
