Curried Wild Rice and Squash Soup

Great taste and texture. I did cut the orange juice in half because it felt like it was too much, and I'm glad I did. I'd be excited to try cider instead, which other reviewers suggested. ALSO, I cut the rice in half too, and I'm so glad I did. With just half the wild rice, it was a dense, thick soup -- with twice as much I think it would be more like sloppy rice than soup! Great recipe overall, and thanks so much.

Fennel with Rosemary, Shallots and Goat Cheese

Delish! I used just one large fennel bulb, and cut it into thick slices. This ended up being about half the fennel, I think, so I halved everything else. The goat's cheese really made it. I've made fennel before, and everyone rejected it. This time my hubby asked for seconds!

Very good! Looks great, dates are delicious. Very runny when pouring it into the pan, and for me took just over an hour to bake, but the result was very well received by all! Thanks.

Elegant Orzo with Wilted Spinach and Pine Nuts

Very good tasting and looks great. Sundried in place of the fresh tomato is a great change. I would also recommend cutting up the spinach before cooking. I used baby spinach, and it sort of "clumped", meaning many fork-fulls were without and some had too much spinach. A small note to improve a great recipe. Thanks.

Breaded, Fried, Softly Spiced Tofu

Great! I made it with just a mild curry powder for the spices. My 1 and 3 year old GOBBLED them up, just as finger food dipping into hummus. So easy and fast. I think you could add crushed peanuts into the breading, or use some peanut sauce as a dip. Thanks for the very useful recipe.

Brazilian Bananas

This is alright, but I think there are many, many ways to use up 6 bananas that are better than this. The "syrup" is very runny, and the dish is very sweet. Also, the presentation isn't much -- limp, wet bananas. Sorry. The taste was actually alright (and I toasted the coconut, which was good) but I don't think I will bother again. Sorry.

Eggplant Parmesan II

This is great! I did salt the eggplant first, which may or may not have made a difference. I also found that the baking stage took much longer -- like, twice as long, probably. However, all done, it was a great meal over spagettini.

Broccoli Noodle Salad with Asian Peanut Citrus Sauce

Great pot luck meal (without peanut allergies, of course). I cut back on the lemon juice a little bit, otherwise, did it as is (with whole wheat spagettini). Good dish. All gobbled up.

This is definitely a good soup. Would be good for visitors. The lemon, I think, is a really nice touch. I used veg broth to make this a vegetarian dish. Easy & quick to make.

Moroccan Lentil Salad

I think this recipe is good, yeah, but not as good as I expected based on the reviews. I found the lentils only took 10 mins to cook, and were mushy in the salad. Next time I will use half to a full can of lentils instead, as I find that they remain firm. I think additional items such as avocado would be nice, but that probably draws away from the ethnicity of it.

Fried Rice with Cilantro

I used this as a starter recipe, and ran from there. I was really inspired by the use of herbs in this rice dish, and loved the flavours! To make it vegetarian, I used silken tofu instead of chicken. I added more garlic, a dash of sesame oil at the end, added peas, fried in an egg, and replaced the green onion with chives. All in all, really useful and delicious. Thanks!

Delicious Chickpea Curry

Great recipe! But definitely cut down on the cayenne if you aren't ready to have your mouth burned off. I like spicy, but half the cayenne was plenty. Kids loved it!

What I like most about this recipe is the versatility. I definintely think the squash is a good idea, but other vegetables can be varied. Other than that, I pretty much followed the recipe exactly. My baby loved it!

Fennel in Wine and Honey

The dish was certainly tasty, and I liked it, but it wasn't a major hit on my dinner table. I think it's the fennel itself that was off-putting, not the recipe. I used regular mustard, but otherwise followed the recipe exactly, and I enjoyed the dish overall. I don't use fennel a lot, but with the right overall meal, I think this is a nice addition. Something to make now and then as a surprise side dish.
