Peach Muffins

Reviewed: Aug. 23, 2011
These are pretty good. They didn't knock my socks off, but it's a good recipe and I'm sure I will make it again. I found they didn't "rise" much, didn't look like big, beautiful muffins when they were done for some reason. More like pucks -- good thing they tasted better than that!

Zucchini Parmesan

Reviewed: Aug. 14, 2011
This is really good! I agree that frying up the zucchini makes sense rather than boiling. I used less tomato sauce than indicated too. Bread crumbs along the top, and we were good to go. Kids, adults, everyone enjoyed it. The kids thought it was lasagna, and I just went with that!

Zucchini Muffins

Reviewed: Aug. 8, 2011
I was looking for a sugar-free recipe, and this one is good. Based on other reviews, I used one whole egg, applesauce in place of the oil, and added Craisins, which were a really nice touch. I sprinkled flax seeds on top. 18 minutes in over had them nicely browned.

Fresh Fruit Cobbler

Reviewed: Aug. 1, 2011
It is an easy recipe, and I enjoyed making it. I added cinnamon and sugar directly to the fruit. My whole crumble (made up of a collection of fruit: apples, peaches, yellow plums, blueberries, raspberries) was tart. Not sure how to remedy that exactly. Kids, therefore, didn't really eat it, but the adults loved it.

Healthy Banana Rhubarb Muffins

Very good, and a way to get kids to eat the rhubarb in my garden. Each time I've used half whole wheat flour, and otherwise, followed directions. Reliable and delicious.

Grilled Zucchini & Goat Cheese Rollatini with Raisins & Pistachios

A party in your mouth! Because I didn't have all ingredients, I used sheep's milk feta and limes, otherwise, followed directions. DELICIOUS! All dinner guests wowed over it. Amazing. So good.

Homemade granola | Chatelaine.com

Addictive!! And really easy to change depending on what you have in your cupboard, including maple syrup for the honey, addition of sunflower seeds, different kinds of nuts, etc. I'm making it two or three times a week now: healthy and cheap!

Whole Wheat Banana Strawberry Loaf

Reviewed: Jul. 19, 2010
This is really good! I cut the sugar down to only one cup, and it was absolutely enough. I also made into muffins instead of bread. Made 12 good size muffins, baked at 350 for 19 minutes.

Curried Wild Rice and Squash Soup

Reviewed: Dec. 18, 2009
Great taste and texture. I did cut the orange juice in half because it felt like it was too much, and I'm glad I did. ALSO, I cut the rice in half too, and I'm so glad I did. With just half the wild rice, it was a dense, thick soup -- with twice as much I think it would be more like sloppy rice than soup! I have made the recipe once without the rice at all, and it makes for a nice, regular squash soup.

Fennel with Rosemary, Shallots and Goat Cheese

Reviewed: Aug. 26, 2009
Delish! I used just one large fennel bulb, and cut it into thick slices. This ended up being about half the fennel, I think, so I halved everything else. The goat's cheese really made it. I've made fennel before, and everyone rejected it. This time my hubby asked for seconds!

Only change I made was to exchange one cup of flour for whole wheat. Bread was a sweet treat, and enjoyed by all. Thanks!

Very good! Looks great, dates are delicious. Very runny when pouring it into the pan, and for me took just over an hour to bake, but the result was very well received by all! Thanks.

Elegant Orzo with Wilted Spinach and Pine Nuts

Reviewed: Dec. 31, 2008
Very good tasting and looks great. Sundried in place of the fresh tomato is a great change. I would also recommend cutting up the spinach before cooking. I used baby spinach, and it sort of "clumped", meaning many fork-fulls were without and some had too much spinach. A small note to improve a great recipe. Thanks.

Breaded, Fried, Softly Spiced Tofu

Reviewed: Nov. 12, 2008
Great! I made it with just a mild curry powder for the spices. My 1 and 3 year old GOBBLED them up, just as finger food dipping into hummus. So easy and fast. I think you could add crushed peanuts into the breading, or use some peanut sauce as a dip. Thanks for the very useful recipe.

Yup, good. But I think you could double the pear and be fine. It was a little thin/shallow for my liking. Otherwise, taste was great.

Brazilian Bananas

Reviewed: Aug. 19, 2008
This is alright, but I think there are many, many ways to use up 6 bananas that are better than this. The "syrup" is very runny, and the dish is very sweet. Also, the presentation isn't much -- limp, wet bananas. Sorry. The taste was actually alright (and I toasted the coconut, which was good) but I don't think I will bother again. Sorry.
