About this Cook
I used to be a high-powered business chick. Then I married and moved abroad where I couldn't work. What did I do? Took up cooking! I am a vegetarian, and my husband eats what I cook. That was fun to start, but then we had our first baby in April 2005, and now that she's eating what we eat, being healthy and fast (!) are very important. I've given up life in the fast and competitive lane for life in the busy and completely fulfilling lane as wife and mother, and couldn't be happier. Life is how it should be.
My favorite things to cook
All things vegetarian -- I love Indian, Mexican, cheese dishes, and Asian foods. Who says side dishes have to be side dishes? We eat a collection of healthy meals.
My favorite family cooking traditions
The other veggies in my family and I are always in charge of veggie foods for holidays. It's fun -- and with an inspirational brother in law who loves to cook, we play the "what can we make from items in the fridge game." He's incredible with it... give him 5 ingredients and he'll make a vegetarian masterpiece.
My cooking triumphs
Lots from allrecipes.com. I love making dinner for lots of meat eaters, serving only vegetarian food, and having them all satisfied and not missing meat at all!
My cooking tragedies
When I first moved off to university I could do nothing but toast and cereal. Everything was a disaster. I took a vegetarian cooking course, and learned so much.

Peach Muffins
These are pretty good. They didn't knock my socks off, but it's a good recipe and I'm sure I will make it again. I found they didn't "rise" much, didn't look like big, beautiful muffins when they were done for some reason. More like pucks -- good thing they tasted better than that!

Zucchini Parmesan
This is really good! I agree that frying up the zucchini makes sense rather than boiling. I used less tomato sauce than indicated too. Bread crumbs along the top, and we were good to go. Kids, adults, everyone enjoyed it. The kids thought it was lasagna, and I just went with that!

Zucchini Muffins
I was looking for a sugar-free recipe, and this one is good. Based on other reviews, I used one whole egg, applesauce in place of the oil, and added Craisins, which were a really nice touch. I sprinkled flax seeds on top. 18 minutes in over had them nicely browned.
