Jalapeno Popper Spread

This was pretty good, but I think I'll stick to my artichoke/green chili dip. It seems to have more substance than this one.

Chicken Noodle Casserole I

Reviewed: Dec. 24, 2009
This was really good! I made a few changes to make it more flavorful though. I sauteed onion and garlic to mix with the "sauce" and added some chopped cooked bacon and some peas. Although I did boil the chicken and cook the noodles in the chicken water like the recipe calls for, I don't think it's terribly necessary, and will probably just sautee up some diced chicken separately from the cooking pasta. Oh, and one other change I made was to use panko crumbs instead of butter crackers for the topping. It was great!

Sesame Shrimp Stir-Fry

Reviewed: Nov. 30, 2009
This was pretty good. I only added a sprinkle of cayenne because 1/4 tsp seemed like too much. Even the sprinkle made it spicy enough (and I like spicy food). I also added 2 tbsp of honey to the sauce after it thickened, because I thought it should be a bit sweeter (I used Kikkoman's teriyaki). I'll probably make this again.

Caramelized Baked Chicken

Reviewed: Nov. 8, 2009
I was glad to find this recipe that I didn't need to marinate first. I did have to warm up the sauce in the microwave a bit so that it blended well before I poured it over the chicken. The chicken turned out great, and I'll be making again.

Potato Leek Soup III

Reviewed: Nov. 8, 2009
This was so delicious. The only changes I made were to add 5 cloves of minced garlic to sautee with the leeks, cut the butter in half and add about 1.5 more cups of broth to the soup. I will make this again and again, and will use it as a base for all of my cream soups/chowder etc. Next time, I will try using just milk to see if I can cut some of the fat. If I do that, I am sure I'll need to add more cornstarch to thicken up.

Slow-Cooked Oriental Chicken

Reviewed: Nov. 7, 2009
Quick, easy and delicious. I threw these together quickly and the chicken ended up really flavorful and delicious. I loved how I didn't have to marinate these first. I'll be doing these again.

Coconut Cream Cake I

Reviewed: May 25, 2009
This cake was pretty tasty, but VERY sweet. Unlike many other reviewers, my cake did take all of the coconut/milk mixture - but I poured it in batches. I poured a little on the cake, then waited a bit, then poured a little more on, then waited etc. until it was all used up. It soaked through the cake and didn't pool at the bottom of the pan at all. I think that's the trick. This cake has a very moist texture - and for some, it can be off-putting. I loved the texture, but my husband said it was like eating cake that someone had already chewed up (but he liked the flavor). I'll definitely do this again, but may alter the amount of sauce I use to make this a bit less sweet.

This was so delicious. My husband is a big fan of KFC's bbq chicken and this is a close second. We used Jack Daniel's BBQ sauce, and it was fabulous!!

Chocolate Marshmallow Frosting

Reviewed: May 3, 2009
This is yummy - but I made some modifications. I used 3/4 stick of real butter and 3/4 c. of cocoa powder. It is more like a ganache texture - do not try to pipe with this frosting. I topped cream filled chocolate cupcakes with this decadent topping and they taste amazing!

This was really wonderful, but lacked a bit of flavor. Next time, I'd add some salt to the flour mixture. Served with teriyaki and rice - yum!

Peanut Butter Frosting

This was a hit! I also halved the powdered sugar and added a bit more cream to taste. I layered it with a chocolate cake and it was very good. Just try not to eat too much frosting off of the spoon before frosting your cake!

Fiesta Fry Pan Dinner

This is a really great idea! I added some garlic powder and cumin for additional flavor, along with some black beans. I wasn't sure about the zucchini at first, but it tastes delicious in this dish. I served it with rolled up tortillas and sour cream - yum!

Amazing Italian Lemon Butter Chicken

Reviewed: Dec. 19, 2008
I've made this a few times now, and really love it. I left out the bacon and added artichoke hearts. It's not the best for left overs (gets pretty oily when re-heated) - but it so yummy when fresh.

Garlic Bread

Reviewed: Sep. 14, 2008
The texture of this bread was fantastic, and the flavor was pretty good. There was a strange hint of something that I couldn't quite put my finger on, but perhaps that was just the quality of parmesan that I used. I will definately try this again.
