Super-Delicious Zuppa Toscana

This is so yummy. The first time I made it, I let the sausage boil in with the soup - and it made it really rubbery, so... don't do that. :0) Otherwise, the flavor is fantastic.

Blackberry Pie I

Very good - I will use this again. I rated it 4 stars because it definitely needed an extra 15 minutes than the recipe stated. I'll also cut down on the flour by just a bit and add a tad more sugar next time.

Pierogi Casserole

Super delicious! My husband and toddler son loved it too. Next time, I'll add a couple more potatoes and an extra onion. I also would recommend doing at least two layers of the onion/bacon/garlic mixture instead of just the one toward the top. We loved it throughout.

Mom's Zucchini Bread

Wow. So. Good. I have never been impressed with zucchini, but I had a bunch of it from my aunt's garden and decided to make some bread with it. Very glad I found this recipe. It is so moist and has a really delicious crispy top to the bread. I was worried when I was making it because the "batter" was much more like a cookie dough consistency before I added the shredded zucchini - but the zucchini (undrained/unsqueezed) added the perfect moisture it needed to be more like a bread batter. I'm definitely not going to shy away from making zucchini bread again now that I have this recipe!

Pear Butter

Really great, but I made a lot of changes. I left out the citrus since I am not a fan - and added cloves and cinnamon to taste. I don't have a food mill, so I made sure to peel the fruit before boiling and then ran them through a food processor until pureed. (Note that I drained most of the liquid from the pears before pureeing). I cut the sugar to 1.5 cups and cooked on the stovetop for 2.5 hours. I then froze the pear butter instead of canning it. So, yes, a ton of changes - but super yummy!

Bubba's Jambalaya

This is delicious - and very filling. I did not have any bacon, so I used canola oil to fry up my veggies with in the beginning and added a little liquid smoke to the dish for the smoky flavor. I also left out the chicken and only used kielbasa and shrimp. Served with cornbread. So good!

Taco Casserole

I changed this up a bit (surprise, surpise)... I used ground chicken instead of beef, and used a can of tomato sauce instead of tomato soup. I also added about 6 oz of cream cheese to the mixture to make it creamy. I decided to serve the tortilla chips on the side instead of crushed on top - and put 2 cups of colby jack cheese over the pasta/meat/sauce mixture. Basically, when I was done, it resembled chili mac, but it was really really good.

Zucchini Patties

4 stars as written, but it's a definite 5 star with a few changes. It's really important to squeeze as much excess liquid out of the shredded zucchini before mixing it with the rest of the ingredients - otherwise, these would be too mushy/wet. I used about a 1/2 cup of bread crumbs and 1/8 cup of flour. I also added 2 cloves of garlic and a small bunch of fresh basil to the mix. They are soooo freakin' good. Just like crab cakes, but without the expensive crab. We'll be making these a lot.

French Baguettes

This recipe is fantastic and fool-proof! I did this in my KitchenAid mixer, but made sure to add the salt after the first 15 minute rise (so not to kill the yeast). I made this into one large loaf instead of 2 loaves, and it was perfect. May only use egg white instead of yolk for the topping though - my hubby was a bit put off by the cooked egg on the bread (he doesn't eat eggs).

Curried Coconut Chicken

This is pretty good! I added some extra granulated garlic to the sauce as well as a tsp of Garam Masala for extra flavor. I did have to thicken the sauce up with a cornstarch slurry - but that was no big deal. Will make again!

So good and so easy! This makes way more than 6 servings. Brushed with melted butter with salt and granulated garlic added to it for extra flavor. I'd add extra minced garlic to the dough next time too. The extra bread we just grilled up without the brushed butter and put in the freezer for future meals.

Asian Orange Chicken

This is fantastic! I only had the juice of a small lemon, so I made up the difference with more orange juice - and it tasted great still! I had to use more oil for the chicken to crisp it up well. I also added broccoli to get some extra vegetables in the dish. We will make this often in our household!

Melt - In - Your - Mouth Shortbread

So fabulous and EASY! We did a ton of these for our holiday cookie trays. We drizzled some with chocolate, and pressed cherries into some of them before cooking as well. They're very delicate, but definitely melt in your mouth.

Mom's Macaroni and Cheese

Pretty incredible. I added some extra Velveeta as well as extra cheddar cheese. It would have been even better with a stronger cheese - like sharp or even some gouda. I used buttered panko crumbs for the topping, also.

Indian Turkey Burgers With Lime, Cucumbers, and Chutney

These were amazing. I used ground chicken instead, and a little more spinach than called for. Instead of the spices that it called for, I used some Garam Masala instead. I didn't have chutney, but thought that the cucumber topping with a little mayo added was perfect. My hubby was super skeptical when he put these on the grill, but ended up loving them too. (Oh, and we just used hamburger buns since I didn't have any pitas)
