About this Cook
We're from the states but moved to the Middle East 3 years ago. It's been a fun experience learning and experiencing all different kinds of cultures. I have three little boys who enjoy making and eating food. My husband is a bit picky so I find I have to alter most meals to suit his taste. I love to read recipes, experiment with recipes, buy food magazines, talk food with others, etc. I love AllRecipes.com and look at it nearly everyday.
My favorite things to cook
I love to make sweets and appetizers. My husband and I work with teenagers and so I'm often making food for them. I love to watch them devour the new and interesting things I experiment with.
My favorite family cooking traditions
Our favorite family meal is a grand breakfast. My boys love fancy waffles or creative pancakes. We like to mix the sweet with the savory and make a nice latte with it.
My cooking triumphs
I made a beautiful lowfat cheesecake, chicken milano, strawberry-spinach salad and brushetta for my dear friends birthday last year. It was delicious and really impressed her and the other guests.
My cooking tragedies
Probably the worst thing I ever made was a chicken crockpot dish. It was dry and tasted like old socks.

Avocado, Tomato and Mango Salsa
Delicious! I added extra mango, doubled the avo and threw in about 1/2 cup fresh chopped pineapple. I also did not remove seeds from jalapeno...we like it spicy and I would have actually added another had I had one on hand. Finally, the shops were all sold out of cilantro so I had to omit it (very sad) and yet it still was delicious. Thanks!

Linda's Lasagna
I was very pleased with this recipe. I baked 10 lasagnas for a banquet and got so many compliments. Since I live in a foreign country I did have to make some adjustments...maybe this will help someone else. I used tomato sauce (personal preference) instead of chopped, added about 1/3 cup red wine per batch, added a few shakes of italian seasoning, used a mixture of cottage and ricotta and used the no cook noodles. When I was ready to layer I put all noodles in a pan of warm water to make pliable then I did sauce, noodles, cottage cheese, mozz cheese, noodle, sauce, cheeses, etc. On top I put sauce then mozz. Four layers. I baked covered with foil for 30 mins at 370 and uncovered for 20 mins a bit higher. These were a HUGE HIT! Thanks!

Zesty Slow Cooker Chicken Barbecue
I just threw 2 cups thawed leftover turkey from T-day that was in the freezer into a skillet and then put about 2.3 bottle of HP (British brand) honey barbecue sauce, 3 TBL brown sugar, 1/3 cup italian dressing and 1 generous TBL of worcestershire sauce. Let it cook together for 45 mins and turned out perfect.
