Curried Coconut Chicken
Honestly, if I knew cooking with curry was this easy, i would have eaten it a lot more throughout the years!! I did do a couple of changes... i've doubled the coconut milk and the tomato paste, as I wanted more of a 'coconut' flavor. I also wanted extra sauce, as I added some potatoes, green peppers, onions and extra black pepper to the mix. Fabulous over rice!
