Egg and Sausage Casserole
I made this for Christmas day breakfast. I changed this receipe up a bit to give it a 5 star rating. I did prebake the crust first for about 7 minutes before adding ingredients. I also added cheese on top after the eggs were done setting and this was in addition to the cheese called for in the recipe. I added 10 eggs, hot pepper flakes, I used Jimmie Dean Sage sausage, New Orleans Cajun Spice, salt and pepper, oregano, italian seasonings. I also saute' a green pepper and onion and fresh garlic and added that also to the eggs. Living in New Orleans, I highly season my food to give it a kick. I used a blend of different cheeses, mozzarella, Italian Cheese blend and Mexican Cheeses. Next time I will drain a can of Mexican Style Rotel tomatoes to give it a further kick.

French Toast Corners
I just made this for my husband and followed the directions. You really can use any bread you like, just remember to use a hot non-stick skillet with a tablespoon of butter. Mine did not come out soggy at all. I did heat 100% maple syrup in the microwave and did sprinkle the french toast with powdered sugar. My husband loved this.

Barbie's Tuna Salad
I changed this recipe somewhat. I felt that 6 tablespoons of mayo was way to much. I reduced it to 2 1/2 tablespoons. I didn't have dill so I didn't use it. I had Red Curry and Indian Curry. I used the Indian Curry because I like the taste of that best. I thought 3 tablespoons of sweet pickle relish was way to much, so I reduced it to 1 tablespoons. Everything else, I used what the recipe recommended. I will be making this again. Also, it was great without the dill.
