About this Cook
I'm a mommy/graduate student. I love to cook and especially enjoy finding old recipe books at yardsales-especially those with handwritten recipes. My roots are in the south so I am partial to southern-style recipes and old fashioned desserts.
My favorite things to cook
Anything chocolate *grin* and chicken dishes. I'm a big fan of salads and dishes utilizing old recipes.
My favorite family cooking traditions
We always gather for a *bean feed* on January 1st. My Mom does a pot of beans, spinach and hush puppies-yum! Making and canning apple butter is something we love too.
My cooking triumphs
I do a mean corn casserole that everyone loves.
My cooking tragedies
It's not uncommon for me to add two tablespoons of something I should have added two teaspoons of...so there you have it...lol.

Easy Chicken Casserole
This recipe was great with several additions. I cooked 4 chicken breasts in the oven for 40 min (frozen) with olive oil and a sprinkle of salt. With the chicken baking I boiled 16 oz of spiral noodles, rinsed in cool water and set aside. I cooked up a bag of frozen mixed veggies with butter and salt, and added a container of fresh, sliced mushrooms. Once veggies were cooked, I drained and added to spiral pasta. I also mixed 2 cans of cream of chicken soup and 2 16 oz containers of sour cream. I cut up the chicken pieces,then mixed everything together in a large bowl. I poured it in a huge oven friendly fry pan and topped with one sleeve of butter/garlic crackers-crushed with melted butter (approx 1 stick) and baked at 350 for 30 min. The resulting meal was delicious and it lasted for several days-great for taking to work for lunch.

J.P.'s Big Daddy Biscuits
I was looking for a really good biscuit and figured I couldn't go wrong with this rating but after following the recipe faithfully they came out flat and dense. They tasted really good but weren't big and fluffy as promised.

Honey Baked Chicken II
I've made this dish several times and it's always great! I sometimes use the frozen chicken breasts and will follow the cook time on the package and it turns out fabulous!
