Chipotle Chicken
It was okay. My sauce with the broiled sour cream & spinach came out very runny. Not what I expected. The chicken by itself was very good! Will make just the chicken again and would serve it on a salad, or, just as is.

Black Bean and Rice Salad
I loved this salad. I didn't read the recipe through before making, and didn't have time to let the rice cool very long, so, it was slightly warm. Still great! Can't wait to taste tomorrow when fully chilled.
