Three Bean Salad

Very good! I used less vinegar than in the recipe, and substituted finely chopped red onion for the onion powder, and some whole grain mustard for the mustard powder. Since I was making it for a vegan friend, I substituted agave nectar for the honey. Was very tasty, much better than the store bought.

Cream Cheese Frosting II

Excellent and easy to make. I halved the recipe. It seemed to need a bit more icing sugar than stated, but that was fine. Used it to ice banana spice cupcakes and my friends loved it!

Pumpkin Pancakes

I made a vegan version of these for my boyfriend and they turned out really tasty. I substituted soymilk for the milk, and used powder egg replacer for the egg. I also added some chopped pecans since I love pecans. Great with maple syrup!

Michelle's Coconut Chicken Curry

This was a really good recipe. I was trying to find something close to a curry I like a my favourite Thai restaurant, and this came pretty close. I used potatoes instead of cauliflower and added a bit of lemon juice. I added brown sugar, which helped, but I think I would add less next time (maybe just 1 tbsp).

Hungarian Mushroom Soup

This is a fabulously delicious recipe! Definitely gourmet quality but easy to make. I used a white onion in mine, along with a combination of white button and brown cremini button mushrooms (plus one portobellow). Instead of mixing in the sour cream, I serve the soup with a dollop of it on top. The soup was very spicy (perhaps because I had Hungarian paprika) and the sour cream complemented it well. Yum! No more canned mushroom soup for me! Thanks for the recipe.

Smoked Sausage Pineapple Skewers

What a colourful and tasty recipe! This winning combination of fruit, vegetables, and meat looks and tastes great. I used some bavarian smokies from the deli counter and fresh pineapple. I would probably let the vegetables and pineapple marinate a bit longer next time. Also, the red onion takes longer to cook and was a bit raw so next time I would either precook it a bit before adding to skewers or made separate red onion skewers and put them on the BBQ sooner. Will definitely use this one again.

Fra Diavolo Sauce With Pasta

This was an excellent and easy recipe. I was wary because there aren't many seasonings, but the garlic and pepper produced a wonderful flavour. I used all shrimp (tiger prawns) and added a tablespoon of capers to the sauce, as someone suggested. I also sprinkled a bit of feta cheese on top of each serving. Yummy! We felt like were dining in a fine restaurant. I recommend mixing the cooked pasta with the sauce before serving.

Pork Roast with Thyme

Chicken And Artichoke Penne With A White Sauce

This was a tasty recipe. I added some garlic when I cooked the chicken, and omitted the onion from the bechamel sauce. Definitely good enough for company, but easy enough for a weekday meal.
