Cilantro-Lime Rice
All I can say is WOW! Who knew something so simple could be so good. This one is definitely going to become a regular menu item for our family "Mexican fiestas!"

Aloo Phujia
This is very good, but it seems to be somewhat bland given the amount of spice that the recipe calls for. I have made it twice now and I tweaked the spicing a little to suit my own tastes adding a pinch of cinnamon and about 1/2 tsp. of curry powder along with tripling the cumin and tumeric. I don't know if the leftovers are good or not . . . I never have any!

Easy Soda Cracker Bars
Not half bad. I read an earlier review that commented on the lack ofsaltiness in the crust layer, so I added about 1/8 tsp salt to the cracker crumb-butter mixture. I also threw in some butterscotch chips along with the chocolate chips. Very rich with a salty note to the crust that helped to balance the the sweetness of the filling. Next time I think I'll leave the butterscotch chips out though.
