About this Cook
I'm a Florida transplant, originally from New York state. Cooking is probably my biggest passion, which, if I had to do it for a living, wouldn't be as fun and rewarding. I come from families who were farmers, which probably explains my "knack" for cooking very tasty foods, sometimes just using things scouted out in the pantry and fridge. A mechanic by trade, but a cook at heart!
My favorite things to cook
My favorite foods to cook are too numerous to list here, but 50% of them will include pork, garlic, and onions. Slow cooked pork shoulder roast, ribs, chicken, and a recently discovered passion for fish are the things I like to cook most. Basic "stick to your ribs" foods, I guess are my favorites.
My favorite family cooking traditions
The Sunday dinner is something that has resurfaced in my "more mature years". As a child, either at our own house, or at either of the grandmothers' houses, there was always a Sunday dinner, which most of the time included things from the garden, and lots of chicken (it was cheap and versatile). My father's mother raised chickens and would always have some chicken in the original slow cooker - the pressure cooker. We hunted quite a bit, so there were often Sunday dinners that included some sort of game, ie: venison, rabbit, pheasant, squirrel, duck or goose. Ever present sauces and gravies were rich and tasty and would help "wash over" any "oops-es" that may happen.

Roasted Duck
I was inexperienced at cooking duck, which as from past family experiences, can be quite fatty. This basic roasting recipe allowed the true flavor of the duck to be enjoyed without being adulterated by strong added flavors from seasonings.

Bacon-Colby Lasagna
I was skeptical about this lasagna, which traditionally, for me, should be topped with mozzarella and include a ricotta mixture in the layers, but I thought if it has bacon in it, it's gotta be good! I added a small can of tomato paste to the sauce mixture to help thickening because I was afraid of the dreaded "watery lasagna". It was excellent!

Slow Cooker Baked Beans
Just like Mom's homemade baked beans that simmered all day in the oven, without the oven hassle! These baked beans are the closest thing to baked beans I enjoyed as a child and the only drawback is still the wait - but well worth it!
