Tender Barbecued Chicken
We used chicken leg quarters, because they were on sale. Used diet cola and no lemon, since that was the state of our refrigerator. We will add this to our weekly line up. The house smelled so good I was salivating at dinner time, and the meal was to-die-for! We live in the South, where BBQ abounds, and I would say this was restaurant quality. Strange it could be so simple and taste so awesome, but true.

Barbie's Tuna Salad
I made this exactly as written and served it on toasted croissants with cheese. I was very happy with the amount of mayo and dill. The dill really makes the sandwich. My husband and I were still talking about how delish dinner was a few hours later. That's longer than I ever thought I'd talk about tuna salad in my life. I had leftovers for lunch today, and it is even better with all the flavors mingled. We will keep this on hand in our fridge for lunches and snacks. I can see how it would be great with crackers. Very easy and satisfying as well, and a simple source of healthy protein during the day.

Pesto Tuna Salad with Sun-Dried Tomatoes
This recipe is full of lean protein, healthy fats, and rich delicious-ness. So, so good. If you use commercially prepared pesto, be sure to check for hydrogenated oils. Good brands will just have extra virgin olive oil.
