Mediterranean foods are my new interest but I enjoy trying many ethnic foods and recipes! I also like to bake cookies with my kids and my daughter is starting to really enjoy helping mom in the kitchen!

Making large batches of many different kinds of cookies for Christmas time ... especially my grandma's recipes.
My cooking tragedies
For some reason, almost every time I make grilled cheese, I burn the first one I make to the point where I have to start over! My husband teases me that I can make Chicken Cordon Bleu but not grilled cheese!!

Sweet Potato Casserole II
Used this recipe for Christmas and it was a big hit - I received may compliments and was asked for the recipe. Very easy to make and the marshmallows were a nice addition. I did not use the whole bag of marshmallows, though!

Blueberry Buckle
This turned out very well and had a great taste! I followed other reviewers' suggestions and added extra blueberries (about an extra 1/2 cup) and also added about a tsp of vanilla extract. My other suggestion would be to use a 9x11 or 9x13 pan... the 9x9 pan was too small, in my opinion :)

Chicken Tortilla Soup I
AWESOME! The only change I made was to omit Hominy -- did not have any on hand. I topped my bowl of soup with sliced avocado and a dollop of sour cream. I also added a bit of lime juice and cumin to the pot of soup while it was simmering. Will definitely make again.
