Chicken pot pie
About this Cook
I love to cook, it's a treat to me, and I feel a sense of satisfaction when people enjoy the things that I cook and when they compliment me on my cooking skills. I try to use lower fat ingredients, and healthier meal selections, but more often than not, I end up tipping the caloric scale!
My favorite things to cook
I like anything Italian, Southwestern, or Cajun. I love the way the tantalizing smells fill my house when I cook. I think that’s one of the best parts of cooking, baking, or whatever – it’s a highly sensory experience, and I love it!
My favorite family cooking traditions
I love cooking for the holidays. Since I'm born on Christmas, it's rare that I got a birthday cake (pumpkin pie doesn't count!). So instead of sulking every year and hating the fact that I'm a Christmas baby, I make it a point to make an elaborate birthday cake for myself every year. My favorites are red velvet and cheesecake. I've even made myself an ice cream cake!
My cooking triumphs
The first time I attempted to make a roast, I was so intimidated. My mum and grandma made it seem so easy, but I didn't know where to start. So I marinated and seasoned it in the way I normally do steaks, popped it in the oven, and crossed my fingers. An hour later, the roast came out perfectly tender and juicy!
My cooking tragedies
I once attempted to make a Chicago style pizza. Everything that could have possibly went wrong, went wrong. The sauce was too runny, the crust was too soggy, and the cheese was way too thick. What's worse, I almost choked on my creation! It was a mess.

Bronco Burger
A hit! I was craving burgers, but I wanted something different. Since it's a little too cold to grill, I decided to make these indoors. I roasted the peppers under the broiler (you have to slice them in half to do this), then I added 1/4 teaspoon of liquid smoke to the meat mixture, and cooked the burgers in a frying pan. Other than that, I didn't change a thing. Served with a pickle and waffle fries on the side. Absolutely delicious! This recipe makes really big, filling burgers - I could only eat half of mine. I will certainly make this again!

Grandma's Lemon Meringue Pie
I made this for my mother, and I must say, the filling was really disappointing (I used another meringue recipe). I replaced the water in the recipe with milk, but the filling still wasn't nearly as rich and dense as I'd have liked. I did strain the zest from the filling (which was no easy feat, it gets really thick as it cools), but the pie still had a bitter "off" taste. Usually the meringue is what people avoid, but the filling was the bad part this time!

Easy Guacamole
My first time making guacamole. It was an good entry-level recipe, but it left a lot to be desired. I did add sour cream, used a teaspoon of cilantro, a LOT more lime, and blended everything in a food processor, but the taste was still so-so. Something was missing, and I can't quite put my finger on it. My search for the perfect guacamole recipe will continue!
