I thought it was ok, but my son and husband liked it more than the brown sugar meatloaf on this site. It definitely needs a glaze for more flavor.

I really enjoy this recipe as fall is rolling in and its chilly outside. I was cleaning a bunch of chicken and decided to throw this together as I was actually preping for another meal on the weekend. I am enjoying it all week for lunches and easy week night dinners. We like spicy so I used chili ready beans and hot rotel tomates. Also made the recommended Bill Echols Taco Seasoning. Also Must serve with co-jack, sour cream and crushed tortillas or crackers.

Love this recipe because it is so good, super easy and not a big mess. We used Ritz crackers and put some sauce on the bottom to prevent sticking but most on top. Good comfort food.
