Tomatillo Guacamole

This was delicious. The addition of the tomatillo really added a new dimension, I loved the texture and the tang! I used 4 avocado and only 2 tomatoes and added a a few tbsp of chopped cilantro. Thanks for a new take on guac!!

Polish Cabbage Noodles

Very nice change of pace from buttered noodles. Got to use up my cabbage and onions I had in the fridge. I added a sprinkle of caraway seeds before serving. Thanks for sharing!

Awesome! I skipped the cayenne. Instead I seasoned some shrimp with cajun seasoning and quick fried them and added them to the pasta. A great dinner. Thanks

This salad was excellent. I used dried cranberries because that's what I had on hand and it was delicious. What a great way for me to get the Hubbster to eat spinach.

Cool Whip® Banana Split Pie

Hubby is diabetic so I made several changes for him. I lined the crust with thin sliced banana, then I put on chocolate sugar free pudding, more banana and then the berries and topped with sugar free cool whip, sugar free caramel and chocolate topping and then chopped almonds. We really enjoyed this and will make it often.

Grilled Portobello Mushrooms

These were fantastic. I used olive oil and red wine vinegar as that is all I had on hand. Grilled over super hot coals for appx. 7 minutes. We enjoyed every bite!

Buffalo Style Chicken Pizza

I guess I set my expectations too high after reading all the reviews. I was prepared to be blown away but was sadly disappointed. The falafal had only marginal flavor and the pita bread washed that out. I wish I had liked them as much as everyone else.

Just awesome! I used Jimmy Dean 50% reduced fat sausage so there was no problem with alot of grease. Served with fresh OJ and scrambled eggs. A great Christmas Day breakfast.

Chicken Enchiladas II

Fantastic! My changes: sauteed 1 chopped poblano pepper and chopped cilantro with the onion. Since I doubled the recipe I substituted 1 cup of muenster cheese for the cheddar. I also used corn tortillas crisped in oil. Thanks for an awesome recipe.
