All-Day Apple Butter
I thought this recipe was great although I modified it a bit based on some other recipes I found around and, of course, I think you'd want to pay attention to how sweet your apples are, and how sweet you like your apple butter, when deciding how much sugar to use. The basic idea is wonderful and for me, I found the proportions of ingredients to be about right. I had very tart apples and used the amount of sugar given. I have a nice tangy "appley" taste from the tart apples, but it's plenty sweet.
