Fruit Salad

Reviewed: Nov. 26, 2009
I needed a fruit salad recipe to bring to a Thanksgiving potluck. This one fit the bill. I was a little apprehensive about the sour cream but it works well in this. I added a touch of powdered sugar like someone had suggested.

I made this in the crockpot. It wasn't the best cider ever but it was tasty.

Blueberry Cream Muffins

Reviewed: Aug. 10, 2009
I probably overmixed these but they were still really good. They weren't too crumbly like some muffins are. I had to half the batch because I didn't have enough fresh blueberries but it wasn't a problem, it made 12 large muffins. Next time I'll try it with fresh raspberries.

Anyway, I thought this was great, flavor is really sweet but I love the professional look it gives the cake.

Amish Friendship Bread Starter

Reviewed: Jul. 15, 2009
Sourdough starter is new to me. I'm not sure how to rate this recipe. I followed the directions exactly but by the 10th day it was really noxious and frothy. I guess that's how it's supposed to be but I was worried I had ruined my starter because it's been so hot this summer. It seemed outrageous to use something that had been sitting around so long with milk in it. I made bread with it and the bread turned out okay but it wasn't great. It might not have been the starters fault on the recipe I had tried. I'll try something again in a few days after I've fed my new pet.

Sourdough Wheat Bread

Reviewed: Jul. 15, 2009
For some reason there wasn't enough moisture in the dough when it was mixing in the bread machine. It was crumbly and wouldn't form into a ball. I had to add about 1/2 cup of milk to make the right consistancy. Maybe my starter was thicker than usual. The dough seemed really heavy at first but when it rises, it is much lighter.

Soft Sugar Cookies IV

Reviewed: Jul. 1, 2009
Great cookie! Super easy! I followed other advice and made sure the butter was room temperature (real butter - unsalted) so it whips up nicely. I followed the recipe exactly, split the dough in half and mixed in 1 tsp. of culinary lavender for half the batch because I'd been curious about lavender cookies...either way they were great.

Tara's Sweet and Chunky Chicken Salad

Reviewed: Apr. 11, 2009
I loved the addition of sunflower seeds. It added a nice crunch and a touch of salty to go with the sweet. I didn't use canned chicken, just leftover cooked chicken which tastes better. Next time I might use grapes instead of the dried cranberries.

Chewy Brownies

These were great when warm but when they cooled...wow! Moist and chewy! This is a great brownie recipe. I followed the directions exactly as written...the only modification I might make next time is to add a touch more cocoa.

Strawberry Cheesecake Quesadillas

It isn't fancy but it's fast and hits the spot so it deserves 5 stars. I used butter on the pan, rather than cooking spray and went easy on the cream cheese and jam so it didn't make much of a mess.

Lemon-Raspberry Muffins

Reviewed: Jan. 11, 2009
This made about 12 muffins, but I filled the cups up a little higher because I didn't want to use another muffin pan for about 3 muffins. These have a great flavor but they do brown quite a lot on the sides and on the bottom, almost burnt. But they stay very pale on the top. I only baked them for 20 minutes. I'm not sure how to remedy that except for maybe using butter instead of oil or baking them for less time.

Mulled Cranberry Cider

mmmm...wonderful on a cold day. The only changes I made was that I didn't have enough honey so I used some corn syrup to sweeten it up and I used about 1/2 cup of it.

Shepherd's Pie

Great! Instead of the salt, I added 1/2 a bag of Lipton Soup Mix like a reviewer suggested. Had I not done that, I think it wouldn't have been as flavorful. I drained the vegetables but later added a little water to thin it out to make it more like gravy.

Buffalo Chicken Wings I

Reviewed: Nov. 23, 2008
Deliciously spicy and buttery goodness! The only recommendation I would make is that in the initial frying make sure you get them golden and crispy and well drained before you fry them in the sauce so you'll have to fry them for a lot longer than 10 minutes. If the skin is not well crisped, the wings will be soggy. I had to fry them in batches because I didn't have a whole quart of oil so it took a bit longer. We dipped them in Ranch dressing. Reminded me of the chicken wings at Waterloo restaurant.
