I followed this recipe exactly, only omitting the walnuts, and the cookies were still soft and chewy the next day! For those who don't have the same good luck, try my grandmother's trick. Store "hard" cookies in a sealed container, along with a piece of fresh bread, several hours or overnight. When you remove the bread, the cookies will have absorbed its moisture and be soft again. Voila!
