Sarah's Banana Bread Muffins

These muffins are delicious. I followed others suggestions and added 1 tsp. vanilla extract and halved the sugar. The muffins are just all around delicious. Next time I will chop up additional walnuts for extra crunch on top. I baked them forr 35 minutes in total. I have a glasstop electric stove. They came out perfect. These would be yummy with coffee or a nice tall glass of milk. Who am I kidding these would be delicious with anything!!!

Extreme Chocolate Cake

Oh my God this cake was absolutly amazing. I followed the recipe to the letter and made no changes except that I used a cream cheese frosting because I am not a fan of buttercream. I had been searching for a chocolate cake recipe that used ingredients from scratch and tried about 5 others before this one. This cake is so good and rich that you can add frosting if you want or just eat it plain. Its decadent, flavorful, moist I could go on and on. Thanks to the contributor of this recipe for submitting this. It is now going in my family recipe book.

Cream Cheese Frosting II

This frosting is absolutely delicious. It tastes like cheesecake. Its not overly sweet and cloying like alot of other cream cheese frostings on here. I used this on a chocolate cake. I used extra vanilla because I like the taste. This is the type of frosting that if you add additional milk to it you can make a delicious glaze for a fruit platter.

Homemade Pizza Sauce

Very tasty sauce. It would be good over pasta or in chicken parm or foods like that. Its got just the right amount of spice in it to make it right. This makes an excellent everyday pasta sauce as well.

Chunky Cheesecake Brownies

I made these last night for a luncheon we are attending and they are absolutely awesome. They are super fudgy and decadent. The only thing I did different was that I used powdered sugar instead of regular sugar because it was all I had in the house. They still came out perfect. If you follow the directions to the letter they will yield some of the best brownies you ever had. This one is a definate keeper.

Cream Cheese Pound Cake I

I made this cake tonight because I purchased a huge amount of cream cheese to make cheesecake for a party and had some left over. I was in the mood for something sweet but without overpowering glazes or frostings. This cake fit the bill. It's got such a soft texture and just the perfect amount of crustiness around the edges. The flavors were super delicate and needed nothing else added to it. This cake was well liked by everyone in my family. It would also be good served with fresh berries and cream if you want a little fancy. Next time I will substitute the almond extract for orange extract just to play with flavors a bit. All in all a crowd pleaser!!!!

Fudge Brownies I

These taste and look great! Chocolatey,buttery and awesomely delicious. If I am thinking of breaking my diet these are what would convince me to do so. I am not a big sweets fan but my oh my I am so into these. We used 1 1/2 cps of sugar because we used bittersweet chocolate. Other than that no other changes were made. They are cakey yet rich at the same time. The flavors compliment a nice strong cup of coffee or a nice earl gray tea. Next time these are made I will serve with either whipped cream or vanilla icecream. Delicious!!!

Banana Chocolate Chip Cake

This cake was fabulous. My neice and I made this together for an after dinner treat and it was delicious. It was moist and sweet and flavorful. The only thing I had to change was I added sour cream instead of milk because I didn't have any in the house and I ddidn't realize before I started baking. Also I added 1/2 cup of chopped walnuts to it because there is something about bananas and walnuts that just go together. Also I would add about a tsp of vanilla in the future just for some extra flavor. I used mini chocolate chips and it was perfect. Each bite had as much chocolate as banana flavor. I made this in a regular 9x12 cake pan and served with whipped cream while still warm with coffee. This one is definately a keeper. Yummy!

Surprise Banana Cake

My friend Sabrina who is a awesome baker liked this one and she doesn't like anything. It was a mix between a cake and a abread. It is just good as is doesn't need a glaze. This is definately a keeper. I suggest creaming the sugar and butter for about 2 minutes then adding the eggs and letting that co mingle with the creamed butter mixture. I smashed up the bananas and added that too. Then I sifted the dry ingredients together and added them slowly. Don't overmix this and you'll have a moist, tender product that will be awesome with coffee or a nice tall glass of milk. Oh so good!

Jim's Cheddar Onion Soda Bread

The bread texture itself is ok. It needs to be toasted to not be so doughy. It needs something in the flavor department. Perhaps a touch of salt or perhaps the onions needed to be caramelized before putting them in the dough. It should be ok once its toasted and very liberally spread with salted butter. All in all I think I need to play with this recipe a bit perhaps add some caraway seeds and other flavorants.

Tres Leches (Milk Cake)

Oh my goodness this brought tears to my eyes and a song to my heart. It was simply divine. The recipe is perfect in its dimensions. The only thing I substituted was I used powdered sugar instead of regular sugar because that's all I had on hand. I added 2 cups of powdered sugar instead of the one in the cake mixture. It didn't effect the taste or texture. I made the recipe as specified without all the substitutions and changes other reviewers spoke about. Thank you Stephanie for submitting this recipe this one is a keeper.

Ricotta Cheese Pancakes

The 1st time I tried these pancakes was at the cheesecake factory and they were delicious. These are just as good as those. I did substitute 2 whole eggs and 2 tsp regular sugar. I did use fat free ricotta because thats what I had. I omitted the blueberries and added 1/4 tsp lemon extract and I loved these. They were fluffy, light and flavorful. Absolutely fabulous give them a try.

Oven Fried Chicken IV

I made this chicken tonight for dinner and I was pleasantly surprised by how moist yet crunchy it still was. Initially when I put the chicken into the sourcream mixture I was daunted by it because it was so thick and I figured that between that and the cornflakes I'd end up with a soggy, yucky mess. This was so not the case. It didn't burn or become to soggy or too dry it was perfectly moist without being overmuch. I did make some changes I added additional garlic powder and onion powder and some paprika and hot sauce to the sour cream mix. Also unless your a huge fan of rosemary and sage I highly recommend putting in half of those herbs I didn't and it was way to overpowering. I'll adjust for next time. I didn't have oven safe racks so I put the chicken on a oiled cookie sheet with a bit of a lip so no drippings could escape and cause a fire. Nothing stuck and it came out ok. I recommend keeping the herbs in the crumbs and all the other seasoning in the sour cream mix. I also recommend using one egg just to make the sour cream mix a little looser and to bind it all together. All in all I would make this again and again. I paired the chicken (drumsticks and cutlets) with mashed garlic potatos and low fat pillsbury biscuits and gravy. also and additional tip use about 1 1/4 cup sour cream mix instead of the 2 cups. I had alot of excess sourcream. Hey those could be used for the mashed taters or as a dip. Want not waste not. Hope this helped.

Pork Chops and Kraut

I made this recipe for dinner tonight for the 1st time. I have to say I didn't add caraway seeds or paprika becuause I didn't have any. I used very thin porkchops with all the fat trimmed away cut into strips. I seasoned them with a bit of salt and pepper and browned it in olive oil and then added a heaping teaspoon of minced garlic and a small chopped onion. I let everything mingle together and get transluscent then I added about 1/2 a 14 oz can of sauerkraut. and let it cook then I added about 3/4 cup fat free sour cream and about a cup of beef broth because that's what I had on hand. I didn't add any flour to the sauce because it didn't need it. I boiled some pierogies on the side and added it to the finsihed product and that helped thicken up the sauce a bit. It was by far one of the tastiest dishes I have made in a long time and I am not even a big sauerkraut fan and neither is my husband and we love this. Give it a try and it will become a family favorite.

Finger Sandwich Butter Cookies

This is a very versatile cookie. It would do well as a cutout cookie as well. I paired mine with strawberry jam for the middle and melted chocolate and drizzled it over the top of the cookie. They are not to sweet and have enough flavor to stand on their own even if you don't want to add a jam or preserve to it. Make sure to work with the dough when cold when it gets warm it becomes to soft to work with. Love and recommend this cookie to everyone.

Pancakes I

These were perfect. Just make sure you use a good non stick pan and add just a bit of butter to it once its heated. The pancakes bubble when it's time to flip them. They are awesome with just a touch of warm maple syrup or honey. You can add vanilla if you want to but really they don't need it because they taste fine without it. Even though the ingredients are simple they are not bland. I am not a big pancake fan but I made these with my neice the other night for a late supper because we just wanted pancakes and figured why wait til morning and these hit the spot. Enjoy with a nice glass of milk. Yummy, Yummy!!!

Cola Pork Chops

This is by far the best pork chops I have ever had. I followed others suggestions and added 1/2 cup honey mesquite bbq sauce and 1/2 cup ketchup. I also seasoned them with garlic,onion,salt and pepper. I also added 1 1/2 cups soda instead of one. Please understand I do not like pork but I will eat it if its made this way. It is soft,flavorful, moist meat. To thicken the sauce I removed the chops and strained the sauce into a sauce pan and added flour to thicken. About 2 tbs of flour. Make sure to stir or it will clump up. Just pour sauce over chops and serve. I like to serve these with either rice or potatoes any style. Do not let the weird ingredients fool you. They are out of this world. Thanks to the author of the recipe for contributing. This is going in my permanent family recipe book. Yummy.

Never Fail Meatloaf

After 12 years of marriage and countless meatloaf related tears and tantrums from my husband, my dogs and myself I have finally found a meatloaf recipe that isboth easy and delicious. The only substitution I made was I ommited the brown sugar and bbq sauce Because I am not a big fan of sweet tasting meats. I substituted 1/2 cup ketchup which I put in the meatloaf mix. About 20 minutes before I took it out of the oven I spread more ketchup over the top and then let it cook. The loaf as juicy,seasoned just right and my husband didn't run for the hills and my dogs aren't trying too call the humane society to rescue them frothe horror of mommy's meatloaf. Thankyou for contributing this recipe.

Dutch Babies II

I have had this recipe saved for a while and just made it. My husband is a pancake and crepe fan but I am not. However, I love these because they are a cross between the two. They are light and fluffy and are wonderful either paired with savory or sweet fillings. I personally recommend trying it with vanilla pudding with unsweetened strawberries and semi swee mini chocolate chips lightly sprinkled. This works as a breakfast,dessert or snack item it is so versatile. Good for times when time is limited.

Triple Dipped Fried Chicken

I used more seasoning than called for. I used onion powder, garlic powder and seasoned salt on the bare chicken first and then I seasoned the dry flour and then i seasoned the wet batter. I likealot of flavor in my chicken and by adding a touch more than called for it came out excellent. I used a full bottle of bear because the batter was to thick. I followed all directions and I must say this was some of the best chicken I've had in ages. This recipe is a keeper.
