Turkey Pot Pie II

I loved this recipe even though I only used it for proportions. Skipped frozen vegetables and substituted sauteed mushrooms and onions plus fresh thyme.

Split Pea and Ham Soup I

Excellent simple recipe, although I did make a few changes. I chopped and sauteed an onion, 2 celery ribs, and a carrot. Threw everything in the slow cooker with peas and a smoked ham shank (couldn't find a ham bone), added a bit of ground pepper, covered with water and left for 8 hours. Then I just pulled the ham of the bone, with a spoon, and threw it back into the soup. The end result was outstanding, even though my peas disintegrated. I think 6 hours would have been plenty.

Slow Cooker Beef Stew IV

This stew is excellent!! I made very few substitutions (rare for me) - used beef stock instead of water, and added about 1.5 tbsp of Montreal steak seasoning to coating flour (replacing S&P and dried herbs/onion soup mix). Browning the meat made all the difference. I put everything in the pot in late evening, and had an excellent meal by morning. I refrigerated the gravy separately so I could separate the fat. I am making it again this weekend, for company.

Mushroom Soup Without Cream

I wished I had some Worcestire on hand to deepen the flavor. This soup was ok but unremarkable. I added some acini de peppe pasta for texture and used crimini mushrooms. ADDED - it is better the next day.

Gourmet Mushroom Risotto

Excellent!! If you follow the recipe and keep adding the warm broth in 1/2 cup increments and stirring, you won't need butter. I halved the mushrooms per correction by recipe author.

Szechuan Spicy Eggplant

This is very good. I used ground turkey instead of beef and skipped the shrimp (didn't have it on hand). Next time I will use more eggplant, it was my favorite part, and more garlic. My husband really liked it as well.

Easy Polenta with Tomato Sauce

Absolutely incredible. The only thing that you can do to improve upon this polenta is serve a poached egg over it. The combination is out of this world.

Fennel Carrot Soup

Excellent combination of flavors. I made some changes - used fresh fennel, added onions, did not use rice, upped the curry and the lemon juice. My husband and I both loved it and couldn't get enough.

Escarole and Bean Soup

I didn't have Adobo seasoning so that may be why the flavors just felt flat to me as is (although the recipe says it's optional). It felt like it needed some sort of acid, so I squeezed a half a lemon into the soup, and it turned into a spectacular dish.

World's Best Pasta Sauce!

I just made this sauce as part of the lasagna recipe and I could not get enough of the sauce. My only changes were using a heap of fresh basil (cut into ribbons) and not adding the extra salt. I had about a cup leftover from the lasagna and I ended up tasting and "tasting" until it was all gone. So good.

World's Best Lasagna

The sauce is out of this world. The recipe is super easy to follow. Lasagna always intimidated me before, but never again. I used no boil lasagna sheets (Barilla) and fresh basil, and skipped adding the extra salt, otherwise followed the recipe as written. UPDATED - it took the two of us a few days to finish the lasagna and it tasted better on day2, and even better on day 3. WARNING: I tend to substitute ground turkey for ground beef. Don't do it here. When I made this lasagna with the ground turkey it wasn't nearly as good (although the sauce tasted great still and would work over pasta).

Frijoles a la Charra

I hate to spoil the great rating but the amount of jalapenos made these beans taste like fire (and we like our food spicy). The beer (I used Negro Modelo) also made the beans taste bitter. This was a lot of work for relatively bad payoff. I doubt I'd make these again, but if I do, I will only add a little bit of jalapenos, and maybe 1/3 of a beer.

Chicken Broth in a Slow Cooker

I make it slightly different: 1) Use leftover carcass, skin and wings from rotisserie chicken (I prefer lemon pepper chicken or even BBQ chicken for this recipe) 2) In addition to 2 celery sticks, 2 carrots and 1 medium yellow onion (quartered), I add 3-4 whole cloves of garlic, 2 bay leaf, and about 1 tbs of Montreal Chicken seasoning. Skip the basil. 3) I cook it on low overnight, skim all the solids in the morning and leave the stock in the fridge for the day. Skim the remaining fat from the top and it's ready to go.
