Hearty Vegetable Lasagna

This recipe wow'd our meat-eating neighbors. I followed the recipe as is, except I drained the water from the mushroom, pepper, onion mix before I layered the fixings. Thanks for the super saucy lovely lasagne! Our neighbors had thirds!!

Naan

These were amazing! I used a stovetop grill, and they turned out really well. This works well to make falafel wraps. "Sean's Falafel and Cucumber Sauce" goes great with these. I added about 1/4 tsp. of baking powder and followed the rest of the recipe as is. Thanks for the great naan!

Spicy Tomato and Lentil Soup

This is a great quick and tasty recipe. Lentils work really well, because they cook so quickly relative to other legumes. I cooked this recipe as listed with a couple of substitutions. I substituted 3 shallots for the onion, and about 1 3/4 cups of vegetable stock for the water. I'm also a big fan of using the stick blender to puree soups. It gives it that "restaurant" quality. If you like your soup a little chunkier, you can divide into half, puree one half and mix into the rest of the soup. This is a definite keeper for our vegetarian household. Thanks for the great recipe!

Sean's Falafel and Cucumber Sauce

These are absolutely amazing! This is one of my favorite recipes on this site. I've used Sean's recipe for years, and just tried making them vegan. I used ener-g egg replacer with the falafel instead of eggs, and I used a combination of plain silk yogurt and vegan sour cream for the cucumber sauce. They were definitely a crowd pleaser. Thanks again Sean!

Tofu and Cheese Stuffed Shells

These stuffed shells were great. I used fat free ricotta cheese and substituted the zucchini for broccoli and spinach. Then, I put the carrots and broccoli in a food processor and chopped the spinach before cooking them. My boyfriend and I both agreed that the spinach was a great addition to the recipe.
