Corn Relish II

This is excellent...super easy, I wouldn't change a thing! I would suggest cutting up the veggies one day & cooking the next. It freezes well. I love to mix it w/ sour cream or cream cheese & eat w/ tortilla chips. Yummy!!!

Jenn's Out Of This World Spaghetti and Meatballs

I only used the meatball part of this recipe, because I already had bottled spaghetti sauce....and WOW, were they fantastic....I still sauted in the sauce for 40 minutes, I've never had such tender meatballs! The ONLY change I made was I used ground turkey as I am a bit of a health nut. They turned out wonderful!! I can't wait to try the sauce too!!

Grandma's Salad Dressing

This salad dressing is WONDERFUL!!! If you like French dressing, you will LOVE this! The only thing I do different is use Red Wine Vinegar, it's just my preference. I never buy dressing from the store now!

Fresco Salsa

This is the only salsa recipe I use...the only change is I don't use bell pepper, I use jalapeno. This is the best, most fresh tasting salsa you will ever be able to make at home! The closest thing I've found to our local mexican restaurant!

Kelsey's Favorite Stuffed Green Peppers

These were good, I've never made stuffed peppers before...I took the advice of others & didn't cook the peppers before baking(I should have) I also added a can of diced tomatoes & used fresh garlic..also added some chili powder. Overall good flavor and next time i will blanch the peppers first.

Yummy Honey Chicken Kabobs

These were really good...the veggies are outstanding!!! i didn't get to grill them, as our grill is in storage, I think they would have been way better if I could have grilled them...but the marinade is absolutely a keeper, it's wonderful!

One Bowl Brownies

Well, i don't think I'll be buying boxed mixes anymore...this recipe is so simple, & so quick-I wanted brownies for the Superbowl & didn't have a mix on hand- this definately did the trick! I absolutely LOVE brownies, and these did not disappoint! Definately put foil in the pan & spray w/ Pam-that way they don't stick. If you're looking for a rich, fudgy brownie, this is it!

Creamy Kielbasa and Potato Soup

This soup is a huge hit with everyone I've ever made it for! I just have a few changes I make-I leave out the celery, use all chicken broth, and smoked sausage instead of kielbasa. I also add some cooked, diced bacon that I saute w/ the onion & smoked sausage. This soup is sooo versatile, that is the great thing about it!

Fresh Salsa

Great recipe, with a few changes-if you want a more authentic Mexican salsa, leave out the oil, vinegar & cumin-add fresh lime juice & cilantro-you'll think you're in heaven!! Oh, and it's important to us a white onion, not sweet or red. This gets better the longer it sets & serve at room temp.

These are pretty good, but I would leave out the miracle whip & add a splash of soy sauce. Top with a dollop of sweet & sour sauce & you won't even miss the fried version!

Amish Breakfast Casserole

This was sooo good! Such a nice change from the same ole breakfast casserole I always make! I made this for Christmas Brunch & everyone loved it! It is more of a hash brown casserole than I originally thought, but I loved it anyway! Wouldn't change a thing.

Jalapeno Popper Spread

I took this to a Halloween party & it was a big hit!! I had 2 ladies almost tackle me for the recipe! I added the whole 4 oz can of diced jalapenos, & it honestly could have used a little more!(And I don't even like hot/spicy things!)Definately bake it, & next time I will stir the Parmesan into the mixture. I did as another user suggested & mixed the cheese w/ Panko bread crumbs. It was ok but it made a hard crust on top which I found myself digging under to get to the good, creamy stuff! Also served w/ Crostini & sliced baguette both. The baguette was perfect, the Crostini took a little bit away from the flavor. My new fave dip recipe!

Spaghetti Carbonara II

I've been making this for a few years now & it is an absolute staple in our house....we have it probably twice a month. I use Whole Wheat Spaghetti & Turkey Bacon to make it a little healthier. I also use 6 eggs & 3-4 cloves of garlic. Also a whole bag(8 oz. I think) of Parmesan cheese. YUM!! A big bowl of this spaghetti is all you need!
