About this Cook
I am a 29 year old married woman (no kids) who loves to experiment with different spices and create hybrid recipes. I don't like being bound by the rules and restrictions of a plain black and white recipe, and measurements scare me, so I eyeball almost everything and make many substitutions. I've had luck with my techniques so far!
My favorite things to cook
I love "dump cooking". Basically, this means taking a bunch of staple ingredients (starch, meat, veggies - at least one of each works great), adding random seasonings and ending up with dinner. I think I inherited this from my mother. Because I don't cook from recipes most times, I end up forgetting how I made something, which upsets my husband!
My favorite family cooking traditions
My mother is from New Orleans, and I have yet to master the art of Cajun cooking, but I am working on it. My father always makes the stuffing for Thanksgiving from an old family recipe, and his specialty is Maryland crab cakes - yum!
My cooking triumphs
My husband calls everything a triumph, but I think he's biased! ;)
My cooking tragedies
I'm not so good at baking. I hate measuring, and so I always end up with not quite what I expected. The results are normally edible, though not always!

Chicken in Savory Lemon Sauce
We love this recipe. I cut the chicken into chunks before cooking as I have bad luck with browning whole breast pieces. I also add some sundried tomatoes (not packed in oil - just the dry ones) for a little extra flavor and WOW - so good! We have tried this over rice as well as couscous and either one tastes really good. I also add garlic because I think I'm a garlic addict - it really adds something to this dish! Oh, and use real lemon juice instead of the bottled stuff - it just doesn't compare.

Slow Cooker Carnitas
Holy cow this was good! Next time I will reduce the cinnamon as my husband and I found it a little disconcerting, but I won't eliminate it completely - it's really, really good, and the cinnamon gives it a little extra something. We just found it to be a little TOO much "something". :) We ate it in corn tortillas with avocado, tomato, and a little bit of light sour cream. This is going in my keeper file!

Hominy and Cheese Casserole
This is delicious! I made it as a side dish for Easter, and it went wonderfully with the brisket and sausage we barbecued (we're a little non-traditional). We topped it with a crumb topping like the one in the South Coast Hominy recipe from this site and it made a big difference. Next time, we're going to add some meat of some kind to make it more of a main dish. Spice it up with a little cumin and some smoked paprika and chili powder and this is YUMMY!
