Perfect Apple Pie

This is a wonderful basic apple pie recipe. I've made it several times now with excellent results. I normally use a blend of Granny Smith and gala or Fugi apples. Also, I find the crust to be very easy to assemble and work with (usually I'm terrible at crusts). This is definitely my "go-to" recipe for pie.

Sour Cream Pumpkin Bundt Cake

Fantastic recipe! I added some additional spices to the cake batter (about 3/4 tsp. each of nutmeg and ginger). But otherwise, didn't change a thing. This was SOOOOoooo delicious, and a real hit at Thanksgiving. Be sure to use all of your streusel and glaze! Oh, and baking time was about 75 min. for me using a convection oven. LOVE this!

Apple Butter Spice Cake

This is cake is very good, but I wasn't all that impressed with the brown sugar filling/topping. I think it needs something more than nuts and brown sugar. Perhaps some butter and oats added to the mix would make a better "crumble"? Otherwise, very good flavor! I got a lot of compliments on this after serving it at a party.

White Chocolate Blondies

I turned these into cranberry-orange blondies and they are absolutely delicious. Here are the changes I made: substitute 1 Tbsp. orange juice for the vanilla extract (white choclate already has plenty of vanilla in it, so you don't really need extra). Omit the semi-sweet chocolate chips and add 1 cup dried cranberries instead. Add 1 Tbsp. freshly grated orange zest. Otherwise, I followed the recipe exactly. **Also, these took 35-40 min. to bake in my oven. They were definitely not done in 25 minutes.

Fruit Dip II

I feel this is way too dense and sweet as written. I thought it would be fluffy, but it really isn't. I think this can probably be remedied by folding in some Cool Whip (as others have done).

Greek Chicken

This was good, but I think the pounded chicken breasts need to be marinated overnight before filling. The feta mixture inside the rolls was very good, but the meat itself seemed a bit dry/bland. I will probably make this again.

Grilled Salmon I

Outstanding flavor! The only problem was that the fish completely fell apart on the grill. :-( Next time I will use a grill basket. I did make some changes to the recipe (see following), but I'm sure it's fantastic as written: -1 T. lemon juice and freshly cracked black pepper (in place of lemon pepper seasoning) -NO garlic powder -1/4 cup honey in place of the brown sugar -1/4 cup of olive oil instead of 1/3 cup vegetable oil -marinated for about 12 hours.

Ronaldo's Beef Carnitas

Very good! This is a nice change of pace from the pork carnitas I usually make. I served it with flour tortillas and taco fixin's, and everyone loved it. I can't give it five stars "as is" because I definitely think the seasoning needs to be increased. Also, this cut of meat is super-duper fatty, and I had to pick out lots of gelatinous gooey fat pieces from the finished product before I could serve it. Other than that... extremely tasty!

Mexican Bean Salad

Delicious! I used canned corn and only one pepper (red), but otherwise followed the recipe exactly. Everyone at my Mexican themed dinner party loooooved this dish. It also makes a fantastic accompaniment to tortilla chips. :-)

Spanish Chicken and Rice

The flavors in this dish are very nice. I browned the chicken in a Dutch oven, then mixed everything else into the same pot and stuck the whole thing in my coventional oven to cook. This method worked quite well for a tasty "one-pot" meal.

Delicious! We really loved this. I used olive oil mayo (which is about half the fat/calories as regular), and I did not use as much of it as the recipe called for. But the dish still turned out OH so rich and tasty. Yum!

Marinated Pork Tenderloin

Very good! I love the cinnamon. This would have been outstanding cooked on a grill. But since we don't currently have one, I had to use my oven (425 for about 25 minutes). Regardless, it turned out great.

Spicy Sausage and Rice Casserole

Very tasty, and smells SOOOOO good when it's cooking. I used all red bell pepper (no green), and mild Italian pork sausage with about a 1/2 tsp. red pepper flakes (instead of cayenne). It had plenty of heat. YUM!!

Gourmet Mushroom Risotto

Mmmmmmm, comfort food. I made this as a side dish for our Valentines Day dinner, and we both loved it. I may have overcooked the rice just a little (it was more mushy than "al dente"). But it still tasted delicious. I did double the wine and reduced the broth to give the dish more of the wine's tartness. I would definitely recommend doing that. I also cut back on the amount of mushrooms called for, and I used all baby bellas (no white mushrooms). Fabulous! :-)

Filet Mignon with Rich Balsamic Glaze

Wowzahs!! This was phenomenal. Of course, I did buy 2 inch tenderloin steaks from a local butcher at about $25 a pound(yikes!). But it was totally worth it. The meat was SOOOOOooo tender and yummy. My husband is more of a "plain beef" kind of guy. But I really love the tartness that the wine and vinegar impart to the meat. This is excellent! We had it for Valentine's Day with some mushroom risotto and an avocado and tomato salad. What a meal! :-)

Chocolate Chip Pumpkin Bread

Sooooo delicious! The only change I made (accidentally) was to use regular sized chocolate chips instead of the minis. I made muffins from this batter, and they were wonderful. We had them Christmas morning.
