Chicken Tortilla Soup I

Yum! We love soup at our house and we love "mexican-y" type foods too, so this was a hit, even with the kids (age 4 and 17 months). I added a heaping tsp. of cumin (because we love it so much). I didn't have a can of green chiles, but I did have a can of rotel diced tomatoes and green chiles, which I drained and added instead. I doubled the black beans because we love them and all I had was a big can anyways. Yummy!

Sloppy Joes II

Great substitute for canned sloppy joe sauce-I like that it's so super cheap to make and I already have all of the ingredients on hand! Thanks!

This was okay; I was kind of disappointed. It lacked alot of seasoning. I had to add salt at the table because it was still bland. I think next time I'll try a different recipe. By the way, it makes A LOT!

Chuck Wagon Wraps

A lot better than I expected! Didn't have bbq baked beans, so I just got "Bush's Country Style" baked beans and added bbq sauce to the pot. My husband enjoyed it and thought it would probably be good with some chopped onion cooked in with the meat mixture. I also used ground turkey and couldn't tell a difference from beef with all the other ingredients mixed with it.

I don't know what I did compared to everyone else, but I followed the recipe and this was not good! It just had no flavor! My toddler didn't like it and he eats everything!!!

Homesteader Cornbread

This is absolutely the best cornbread I have ever made! And I've made alot! The only change I've made is that I use a cast-iron skillet to cook it in the oven instead of a 9x13. I think it gives it more flavor and a crispier crust! Yum!

Chicken and Wild Rice Casserole

We love this recipe and we make it at least once or twice a month! We leave out the white wine, curry powder, and celery for the simple reason that we never have any of those ingredients on hand. I usually cook my wild rice in chicken broth instead of water and it makes the flavor go up 10 notches! I've even used fat-free sour cream and 98% fat-free cream of mushroom soup and cannot tell a difference!

Seasoned Rice

This was a major surprise! I made it at the last minute because we had NOTHING for a side dish. I used regular margarine instead of soy, and we didn't have any nutritional yeast, but it was delicious! Even my picky husband liked it. Very good, easy recipe that has a lot of flavor! Yum!

Chicken Pot Pie V

This recipe is pretty good, but I had to make some modifications. I had to add more broth and another can of cream of chicken, then I ended up adding some milk to make it creamy. Otherwise I'm afraid it would've been too dry. I used a pre-made refrigerated pie crust, too; much easier! But this is still a pretty good chicken pot pie recipe!

Texas Ranch Chicken

This recipe was not good! Besides the fact it was all one color (chicken is white, ranch is white, cheese is white) and didn't look appealing, it just didn't taste good. I went back and looked at it to make sure I didn't forget something, but I made it the way it said.

Fried Rice I

The fried rice was decent, but not as good as I had hoped. I didn't like that the egg was in "chunks" in my rice. Next time I'll try cooking it like they do at Japanese steakhouses-put the egg in raw and cook until it's not shiny; then you can't see it.
