Pecan Squares Cookies

Reviewed: Feb. 19, 2009
SO GOOD! I only had about 1 1/2 cups of nuts, so to make up the difference, I added chocolate chips. I also made it in a 9x13, so I had to bake it about 6 or 7 minutes longer. It turned out really good, and I can't wait to make it again...with or without the chocolate chips!

Quick and Almost-Professional Buttercream Icing

Reviewed: Feb. 12, 2009
SO GOOD! This frosting is very smooth and silky! I probably won't ever buy frosting from the store again, either! I made 1 1/2 batches to cover a 9-inch round, double layer cake. (1 batch wasn't enough to cover it) I'm anxious to try to make it with chocolate next time!

Gooey Butter Cake IV

Reviewed: Jan. 23, 2009
If I could divide the rating into two, I'd give the crust a 1 and the "goo" a 4. The crust is too doughy and not enough like cake; it's very dense and heavy. I also think the crust is too plain. I was born and raised in St.Louis and all of the gooey butter cakes that I've had, had more of a cake feel and taste to the crust. The "goo" is very tasty, but was way too runny. The crust made by the goo on the very top was excellent, though. The "goo" definitely tasted like the gooey butter cakes I've had growing up, but the one on this definitely needed to be less runny. Nice try, but it needs some tweaking!

Oklahoma Cheese Grits

Reviewed: Jan. 20, 2009
So yummy! My husband, who had never had grits before, thought it was awesome. Though he thought it would make a good side dish for a dinner instead of breakfast. I say whatever, it's good anytime!

Cinnamon Belgian Waffles

Did not make very many waffles at all. Tastes very egg-y. The touch of cinnamon is a good thing, though.

Chewy Caramel

Reviewed: Feb. 1, 2008
VERY GOOD!!! So much better than the recipe my father-in-law uses. It's very buttery and has the perfect amount of saltiness. The only thing I will do differently next time is cook it a tad bit longer so it's a little harder. We needed to refrigerate it so it would be a little harder to cut it and dip in melted chocolate.

Clone of a Cinnabon

Reviewed: Jan. 28, 2008
Very very good! I craved cinnamon rolls throughout this entire pregnancy, and these were the only ones worth mentioning (that weren't from the store). I, too, do not have a bread machine and was able to make these following the suggestions in other people's reviews. I will definitely be making these again!!!

Candy Corn Bark

Reviewed: Oct. 18, 2007
Very yummy!!!! All of the textures and flavors were a perfect combination; some crunchiness, chewiness, sweetness, and saltiness. I took the advice of putting it on wax paper, topping it with wax paper, and kind of smashing it all together. Instead of raisins, I used craisins. And I also added 1 cup of peanut M&Ms for crunch and color. I don't think I used the entire amount of candy corn, just enough for effect. And the cookies did not get soggy at all.

Zucchini Bread IV

Reviewed: May 8, 2007
I've never made zucchini bread, and I don't think I'll ever try another recipe! I, too, substituted applesauce for half of the oil, and it turned out great!

Asian Lettuce Wraps

Reviewed: Mar. 12, 2007
Very good! Instead of ground beef, I used boneless skinless chicken breast, and chopped it up in the food processor. I also doubled the sauce, because it needed more. Definitely something that I will make again!
