Brown Rice and Black Bean Casserole

I really enjoyed this dish. Kiddos werent crazy about it, but I think cutting the veggies a little smaller next time will make it easier/more likely for them to eat. Used a mixed cheese from TJ's and only about half. Added double the carrots, more mushrooms, and garlic. Left out green chiles. Served with Salsa, sour cream, and chopped olives..pretty yummy!

Slow Cooker Latin Chicken

Added more garlic, 2 cups salsa, 2 cup broth, can of corn, only 1 can of beans...frozen chicken breasts at the bottom...perfect with a little sour cream

Marinated Turkey Breast

Really delish. I had a 3pm breast and I doubled the rub and the marinade. Saved 1 portion of marinade to baste with. Yum yum yum. Took a littlenmorenthan 40 min on the grill but well worth it! Make sure you have bread or something to sop up the juices!

Baked Chicken and Zucchini

Wish i had added even more veggies as this was FABULOUS. Followed other reviewer and just put the zuchinnin in the dish..no cooking...then added some fresh garlic on top of that. I went easy on the cheese...it was WONDERFUL

Buffalo Chicken Dip

I REALLY liked this...but unfortunately, it didnt resonate with my BBQ people. Bummer as I really loved it. Will probably try again...maybe during football season. Did the layering approach....melted the cream cheese and ranch together and poured on the bottom of the pan...then mixed fresh chopped chicken with Franks wing sauce to coat and put it on top. Topped with some blue cheese crumbles.

Rice Balls ala Tim

DELISH!! used 2 tbs per meatball and added a few dashes of italina seasoning to the meat while browning. Will try this with turkey next time ALso used brown rice....YUMMY!

Italian Sausage Soup with Tortellini

SO YUMMERS! Everyone loved it. I used canned tomatoes and it was still awesome. Also used 3 fresh italian sausages from my deli...so great. Will make again and again. Good tip on making pasta separate and then adding to each bowl. Makes leftovers better/easier :)

Banana Cake II

LOVE IT! So light and fluffy. Used other reviewer tip for sour milk (1 cup milk to 2 tbs vinegar, but only still use 3/4 cup) and added choco chips to have my batch (I made cupcakes -20 min, mini cupcakes 15 min) Chocolate chips won! So great.

Delish....a little strong on the vinager and this makes a lot (even if you scale down) Will play with oil vinegar mix on next batch..but solid recipe!
