Osso Buco

HOLY COW this was AMAZING. I bought a 3lb Veal roast bone in and it melted off the bone. Per some other reviewers I replaced 1/2 the water with red wine and added a can of diced tomatoes on top of the sauce. My husband BEGGED me to make this again next week. we served over pasta. FANTASTIC

Omelet Biscuit Cups

Good. One toddler liked it the other not so much. Wish I could put more egg in it. I put too many toppings, but without them, nutritional value is low. I added spinach, apple sausage, sun dried tomatoes. Still good. Froze a bunch for future lunch/breakfast.

Awesome and Easy Creamy Corn Casserole

Good and super easy. Made it the day before and just had to reheat. I added green chiles to half of it to make it more fun for the adventurous. Probably will make again.

Sweet Potato and Apple Casserole

YUMMMMMM!! Followed pretty much the recipe, chunked up my apples (golden delicious) and probably used more butter than asked for, but its thanksgiving, so who cares :) will make again. Everyone loved it. Pretty sweet and I used about 1/2 the sugar.

Spinach Enchiladas Verde

these we ok. the only changes I made were to add chicken and a little seasoning, (Cumin, chili pepper) but it was just ok. I did follow reviewer suggestions to make it more of a casserole.

Slow Cooker Cranberry Roast

YUMTASTIC! I used a 3lb chuck roast and followed the recipe to a tee. SO easy ..the meat just melted in the juices and everyone at it up. It served 5 adults and 2 toddlers and we had a small portion left. Not bad! Will make again. :)

Cheese Grits

This was actually quite yummy, but didn;t go over as well with my toddlers. So honestly, if you love grits, I'd give this 5 stars...I'm only rating 4 for my own use. :) I used about half the cheese and it was still yummy

Eggplant and Lamb Stew

FANTASTIC. If you love lamb, please try this. It was amazing. Here are the changes I made: salted/drained the eggplant for almost an hour. Used 2 cans of diced tomatoes instead of the diced. Used red wine instead of water. Added the spices to the tomato paste mixture for easier distribution. Used a whole can of tomato paste. added a bunch of carrots...was going to add potatoes but my pot was too full! Will be making this again and again. The whole family including 2 picky toddlers ate this up!

Very good soup but needed some spices. I added a good amount of Oregano, Cumin, Paprika, and Garlic powder. I also threw in 2 zuchinnis and some chopped celery I had on hand. Wonderful and easy soup.

Slow Cooker Turkey Breast

AWESOME and EASY. Turkey was crazy moist and declicious. I added more spices (thyme, sage, etc) and did add about 1/4 cup chicken broth too. Will be making again..the family inhaled it.

Italian Spaghetti Sauce with Meatballs

Only made the sauce but it was AWESOME. I added some additional basil, oregano and garlic to taste. Very yummy. Mixed up the tomatoes too....some crushed, some diced, etc. Froze half for later as it make a bunch. YAY!

Spinach Enchiladas

Loved these. I used a bag of frozen spinach AND a bag of fresh since I had it. I used cottage cheese instead of ricotta and added cumin, chili powder and some red pepper flakes to taste. I always add more garlic. I also had left over turkey breast so I cubed that up and added it to the spinach mixture. YUMMY easy, and healthy. I added only a cup of cheese total on top, no need for it inside. :)
