Squash Dip

We didn't care for this. The goat cheese flavor was too strong and the tang from the lemon seemed to accentuate that even more. Maybe a combo of feta and cream cheese would be better? It was also very thick. Probably won't attempt this again.

These were very tasty! Use fresh basil, it makes a big difference in the flavor. I melted a slice of mozzerella cheese on them and made a little garlic mayo. Will definitely make again.

No Bake Cookies III

These were very easy to make. I'm not really sure what I was expecting, but I didn't really like them. Maybe add some raisins? Hubby liked them but agreed they "needed something" I probably won't make them again.

To Die For Blueberry Muffins

I made these substituting rhubarb for the blueberries and added an extra 1/4 cup of sugar to balance out that tartness. I also added 2 tablespoons of wheat germ. They were moist and delicious!

Firecracker Grilled Alaska Salmon

Reviewed: Apr. 5, 2008
OUTSTANDING! This will probably be the only way I make salmon from now on! The flavor was sooo good. I marinated my salmon for 2 hours. I reserved the leftover marinade, reduced it in a small sauce pan and basted the salmon while it was cooking which made a nice glaze. I also drizzled a little over the white rice I served along side. Some quickly sauteed sugar snap peas and you have a killer meal in no time! Absolutely incredible and we loved the heat from the red pepper flakes!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Apr. 24, 2007
These cookies were delicious! I had to bake mine for 14-15 minutes. I only used 1/4 tsp of ground cloves which was plenty and I also soaked the raisins which I never would have thought to do...it makes a huge difference in the texture of the cookies!

Stuffed Hot Peppers

Reviewed: Aug. 3, 2006
THIS IS THE MOST DELICIOUS STUFFED PEPPER RECIPE I HAVE EVER TRIED. I USED DOUBLE THE AMOUNT OF SAUSAGE BUT KEPT ALL OF THE OTHER INGREDIENTS THE SAME AND IT WAS THE PERFECT AMOUNT FOR 6 PEPPERS. ALSO, I COOKED THEM FOR ABOUT 45 MINUTES BECAUSE I LIKE THE PEPPERS TO BE SOFTER. THIS WILL BE THE ONLY STUFFED PEPPER RECIPE I USE FROM NOW ON!!!

Grilled Salmon with Habanero-Lime Butter

This was one of the most flavorful salmon dishes I have ever made. I followed the recipe almost exactly only substituting jalapenos for the habaneros. I will absolutely make this again! Loved it!

Apple Maple Crumble Pie

Reviewed: Oct. 24, 2004
This is a delicious recipe. The maple syrup adds such wonderful flavor. I added 2 tablesppons of flour to the maple syrup to keep in from being watery and added cinnamon and nutmeg to the crumb topping. Will never make traditional apple crisp again!

North Carolina-Style Pulled Pork

Reviewed: Aug. 18, 2004
I read a lot of reviews saying the meat was dry. Here is my suggestion: Follow the directions of the recipe but cook the meat in a roasting pan, covered, with a little liquid at the bottom at 300 degrees for 5-6 hours, basting with pan juices every hour or so. I guarantee the meat will be falling apart. After the meat is cooked, pull apart and pour bbq sauce over it, don't bother simmering, it is already tender enough. Hope this helps!

Fruit Pizza with White Chocolate

Reviewed: Aug. 3, 2004
Where do I start? The cookie "dough" which was more like a batter that I had to spread with a spatula puffed up and spilled down over onto to bottom of the oven and burned. After I cleaned that up and cleared the smoke from my kitchen, I used an 18 oz. sugar cookie dough. Thank goodness I thought to buy one just in case. The cream cheese and white chocolate formed a very weird, slimy consistency when mixed together and I ended up taking half of that and mixing in a half tub of Cool Whip which made it much fluffier and 1/4 cup of lemon juice to take away the sickening sweetness of it. I waited till about 2 hours before I served it to frost it and arrange the fruit so it wouldn't get soggy. I used kiwi, strawberries, blackberries and mandarin oranges. It turned out wonderful but the original recipe is terrible. What a waste of time and unnecessary stress.
