I have a husband and 3 kids under 6! They keep me busy and I love it. I enjoy cooking, boating, gardening and being with family and friends.

I love to be creative in my cooking but like keep things simple too. I cook whatever i have in the pantry or fridge but very rarely cook the same thing twice!

Southen comfort foods that include meat, casseroles, slow cookers, and any kind of potato!!

Stuffed Peppers
Just made this and it was wonderful. Made a few changes: browned the beef with diced carrots, green onions and celery and garlic. Added the tomato sauce (prego with mushrooms) and let simmer together while the rice pilaf (near east brand)cooked. Mixed all together with rest of ingredients/spices. Filled the peppers and cooked 1 hr and added cheese topping for another 10 min. My kids loved it. Served with bread and a salad!

Aunt Carol's Spinach and Fish Bake
OMG! So easy and so good. Baked in two separate dishes for kids and parents and was amazing. Kids had cod and we had seabass! Mixed fish topping with breadcrumbs mixture of cheese, salt and pepper and poured melted butter on top. Kids ate every bit and asked for more! YEAH! Husband ususally complains about my fish dishes but loved this one! Keeper!

Kielbasa and Bow Ties
i thought that this recipe was good - only needed a couple changes. i sauteed sausage with onions and added creole spice with garlic paste. once cooked added tomatoes and sauce with a little garlic salt, cumin, and italian seasoning, salt/pep etc. cooked pasta just short of aldente and added to sausage mixture for 10 min to marinate flavors. added parm at last minute. was perfect and great flavor!!! kids loved it and asked to have it as regular weekly meal!!
