Award Winning Soft Chocolate Chip Cookies
only baked 11 - 12 minutes but still crispy not soft, maybe because I used 1/2 butter and 1/2 butter flavored crisco? I was low on supplies. still very good.

Caribbean Coconut Chicken
did it all in my cast iron skillet start to finish but used lite coconut milk. It was pretty flavorful and I let it slow bake on 250 for a couple of hours for softer chicken.

Mexican Bean Salad
Excellent smoky and sweet salad. Friends have requested the recipe and said it was filling and flavorful. I didn't buy the red so used 1/2 of a large sweet onion instead. Keeps well in fridg for a week or so.
