Carrot Cake VII
Very moist and delicious. I used 1/2 cup oil and 1/2 cup applesauce. No pineapple or coconut and I didn't have allspice. I put nuts on the side of the cake as well. Got rave reviews from guests. I used cream cheese frosting II.

Cream Cheese Frosting II
Fabulous! I cut back on the sugar. I have made it with two cups, which is my hubbys favorite and with 3 cups, which is my favorite. It just depends on how sweet you want it. Personally I think 4 cups is way too much.

Red Velvet Cake I
I made this for a friend who absolutely loved it. It was my first red velvet cake and I think it turned out well. I used cream cheese frosting because that is what she requested.It was delicious!
