Black Bean and Corn Quesadillas

This is very filling and tasty! I didn't use the red pepper flakes. The quesadillas with the filling are a little hard to flip over so it can be messy-- but that is OK. We cut up some avocados to serve with the quesadillas as well.

Excellent! I followed other reviewers advice and baked the bottom layer for 5-6 minutes. I recommend spaying some pam on the bottom of your baking dish to avoid sticking.

Yummy Bok Choy Salad

This recipe is a keeper! I have made this salad several times and its one of my husband's favorites! (And he doesn't like eating anything green) I also add sesame crisps or fried wontons to the salad (instead of the noodles). This adds a nice crunchy texture. You can buy these fried wontons in the grocery store, near the salad condiments.

Strawberry Spinach Salad I

I used apple vinegar because I didn't have white vinegar-- and it tasted great. I was a little concerned about the amount of sugar in the recipe, so I used 2-3 tablespoons less, and it still tasted great! I also put a little more almonds.

Sesame Seared Tuna

This was an excellent recipe! I recommend using a shallow plate to "dunk" the tuna in the marinade. I also used toasted sesame seeds and they seemed to stick to the tuna better. I served this dish with birds nests from Trader Joe's. Excellent recipe!

Best London Broil Ever!

I added 2 tablespoons of soy sauce, crushed black pepper, 2 teaspoons of italian seasoning and 2 tablespoons of A1 to the top of the meat and mashed it in. I also put the meat in a deep, oven safe dish so that the entire cut of meat was covered in the canned tomatos (I used diced tomatos). The meat came out very tender. It was excellent. We are going to have this again. I recommend green beans and orzo pasta with this.
