Eggplant Parmesan II
YUM! Loved the cheesy-ness of it all - next time though I would cut into rounds & after baking them, I want to spoon sauce & sprinkle cheese on each round, not covering them fully so you still get the crunch of the bread crumbs.
Also, I used panko (Japanese bread crumbs) - it made it light and delicious!
