Hot Fudge Sauce II

WOW! GREAT! That being said this is what "I" did for our tastes. We love DARK chocolate sooooo.......I used the 4 sqrs. of unsweet. chocolate and cut the sugar to 2/3 cups and put in 2 Tablesp. of butter and used Vanilla paste....and my secret ingredient? Espresso powder (1/2 tsp.)....that's IT.....DARK CHOCOLATE SAUCE.....made an entire jar which is going camping with us next week. SO.....GREAT RECIPE and excellent suggestions from the other reviewers. THANKS ALL and THANKS Erin for posting this! By the way.....yes, I used the fattening cream because if I am having real hot fudge I am having the REAL deal.

Peach Cobbler I

5 BIG stars.....this is my second time making this....I halved the recipe for 2 (leftovers are fabu!) and cut back on the butter by 1 T. I used no sugar w/fresh peaches in season and used brown sugar instead of white AND added some almond extract or you could add vanilla. Sorry for all the changes but I followed it to the letter first time and these changes are for my own personal tastes. This is a wonderful, simple base recipe that can be used with many fruits....thank you SO MUCH for sharing this as my husband does not like any "oatmeal" in his cobblers/crisps.

Fresh Peach Sauce

I "hate" to be one of THOSE people who see a recipe and change most EVERYTHING about it but here goes. I hope this helps someone? I used 3 "medium" ripe peaces and cut into bite size pieces. I used 1/2 c. of water and only 1 Tablespoon of cornstarch....a healthy "pinch" of nutmeg and used brown sugar instead of white and NO almond extract. It was perfect with loads of fresh peach taste. This recipe is a GREAT "base" recipe and sometimes that's more then you need. THANK YOU SO MUCH for posting this!! By the way....we used it on pancakes and will use the small bit left on ice-cream.

Food Processor Chocolate Whipped Cream Frosting

CURL YOUR TOES, FINGERS AND CROSS YOUR EYES GOOD! N'uff said? LOL....but really, I made a "stabilized" version of this which only adds gelatin so the whipped cream won't fall apart but other then that followed to the letter and WOWZER-DOWZER it's yummy! I bake smaller cakes and freeze them for later use since we are only 2 people here and this went on a freezer cake for dessert tonight! THANK A GA-ZALLION times for sharing this puppy.

Tartar Sauce III

GREAT base recipe. One of my FAV sauces for fish you can only get at (rhymes with) RACKER FARREL.....Can I say C.B.? Don't want any lawyers knockin' on my door. ;-) MINE turned out just like that. I added about 2? tsp. lemon juice and chopped up my own sweet pickles and used shallot's and a some dill and 2 pinches of salt and some fresh cracked pepper. I know, I know but all I needed was a good base recipe. SO...bottom line I will use this again and can't WAIT to cook my fish tonight. Thank you so much for sharing.

Best No-Bake Cheesecake

I am going to give this 5 SOLID stars for EASE of making. I used a pie plate and gingersnap cookies w/butter for the crust and followed the recipe to the letter the first time. NEXT time I will add more sugar and less whipping cream. I did not have any issues with whipping the cream into the cream cheese mixture. To "avoid" any lumpy texture you have to whip the cream cheese and sugar FIRST then add vanilla and lemon juice--whip well THEN add the whipping cream. I have to admit I would not be as happy if I had to use a hand mixer with this.....I have a Kitchen-Aid mixer and with it's extra power the cream cheese whipped beautifully with the whipping cream for a smooth, light texture. BUT.....this one's a KEEPER and will be going into my "camping recipes" because anything no bake is GOOD! THANKS FOR SHARING!

Portuguese Custard Tarts - Pasteis de Nata

Giving a good SOLID 4 stars. Can't give 'em a fiver cause hubby said custard was "bland". I really liked them. BUT.....this is a GOOD "base" recipe and making them gave me loads of ideas. Thanks for posting this and by the way.....mine browned up and cooked GREAT and I just used an old fashioned cupcake pan.

Owen's BBQ Chicken

Forget the chicken.....This sauce can STAND ALONE! Ok....after saying that.....I will tell ya what I left out.....the worcestershire sauce ('tis a personal thing) and I did not have fresh garlic so used 2 teasp. of dried minced garlic and as another member suggested I did add some honey. But.....this is so much BETTER the any bottled sauce I have tried. I will keep this one and use it lots! Thanks so much for posting such a yummy, easy and no-brainer sauce.

Giant Chocolate Chip Cookies

I can NOT figure out how these got ANY bad reviews. I just made mine and they have cooled and I cut one is half because it's to close to dinner....I ate the ENTIRE cookie. **head hung in shame** These are FABU and I followed the recipe to the letter. BUT....ROOM TEMP butter and eggs ladies and this is where a Kitchen-Aid mixer comes in really handy. I take my butter, sugars, eggs and vanilla and WHIP them until thick and creamy. I measured out my flour into a sieve along with my baking soda and a PINCH OF SALT (how that got omitted is a mystery to me) and sifted it together then stired in my chocolate chips and walnuts.....then dumped into my whipped butter mix and blend until MIXED ONLY! It's very important to NOT overbeat any cookie flour mixture. These came out crispy/buttery around the edges and soft in the middle. I used a BIG cookie scoop and got 8 cookies and I did NOT flatten them by the way. I hope this helps someone. These are a nice break from the Toll House recipe I normally use and I WILL make them again.

Meatloaf with Italian Sausage

Ya know....I had some ground beef and some italian sausage leftover and found this recipe and said "hmmm, interesting". I had my doubts but made it anyway.....can you say OMGosh GOOD! I did not use the worsestershire sauce or green pepper (personal taste thing) and I scaled down the serving size as well. If you are thinking like I did and thought this sounded strange then let me say.....MAKE IT and be amazed as I was. My picky hubby who is not even into meatloaf loved this and said he could eat it again. A million thanks for sharing this different but delicious recipe.

Gramma's Apple Bread Pudding

10 STAR GOOD! This is not a "diet" dessert so be warned but whatever calories you do consume will be SO worth it....TRUST ME! The only changes I made to this recipe was the use of butter and 1/2 and 1/2 and I baked it in a water bath....as for the sauce some liked the "butter" vanilla combo and some thought it was to much....I poured the warm sauce over my pudding while it was still hot and it was FABU! Oh YES! I halved the recipe and added an extra egg as other's suggested. My husband RAVED and said I can make this again and again. THANK YOU SO MUCH for sharing this recipe. It has been printed and will go into my private cookbook.

Frosted Cake Brownies

Can I just GUSH for a moment?!!! I found this recipe early summer and have made it several times. This can NOT be messed up....how great is THAT and let me say these 2 words.....MOIST and MOIST! N'uff said? IF you are looking for a fool-proof recipe and are a true brownie lover then THIS IS THE ONE! Yummers to the max! A gazillion thanks for this one.

Apple Crisp

This is OMGosh EASY and just a perfect amount for 2 people which I LOVE! I used my mini-cuisinart to do the topping which made my work not seem like work at all. You can also play around with this one and not mess it up...at least I have not yet. MANY THANKS for sharing this wonderful yet simple recipe.

Mrs. Sigg's Fresh Pumpkin Pie

10 STARS! I made this last year when pumpkins came in and forgot to review. Duh...This is so much different then using canned pumpkin. My pie came out really creamy.....hubby commented on it said "different but good"....I loved the texture. Yes it's more work to make this but well worth it...I didn't change a THING by the way. Miss Betty's Super Quick Dinner Rolls

5 SOLID stars from me. I made them the other day to go with stew and they are UBER easy to make but they had a "biscuit" texture and not the dinner roll feel and texture I was hoping for. I WILL make these again due to how FAST they came together and the taste was great. I would only rate them 4 stars but the entire recipe as a whole gets 5 stars and let me also say for feeding 2 people this is PERFECT as scaling down recipes gets old sometimes. THANKS for posting this!

English Muffins

I am giving this one 5 stars even though I won't make them again. WHY? Ease of making...and the flavor is wonderful. This recipe, although very good, turned out a more "dinner roll" texture muffin. Do not get me wong I do not need those "nooks & crannies" but I will have to pass on this one and keep looking.

Colleen's Potato Crescent Rolls

I am giving this recipe 5 solid stars even though I won't make them again. WHY? well.......Colleen says they are "delicate" and indeed they ARE. VERY SOFT and SQUISHY....almost to much for our taste but they are very good with a great flavor. Hence....5 solid stars. If you are looking for a VERY soft roll recipe this is IT.....These were fun to make and good experience for me....thanks for sharing.

Mom's Coleslaw

I was desperate and out of the "jar poppy seed" dressing which I don't like but hubby does (don't get me going!) I found this recipe and the only thing I did was cut back on the sugar a bit and can I just say....YUMMY! Hubby raved and I am now free from the evil jar dressing troll! THANKS Denise for sharing this....I think next time I may try some dill in it just for kicks and giggles. I printed this out and it goes into my forever recipe book I am building.

Bride's Peach Pie

5 WHOPPIN' stars! OK, I did make one change.....my peaches are in season and VERY juicy and sweet I did not even add the white sugar only the 1/4 cup brown called for. (PACKED by the way) OMGosh it was perfect.....all the flavors just blended perfectly and my pie was not uber sweet which we do not like. A MILLION thanks for sharing this amazing yet so, so simple recipe! **By the way I followed this to the letter except for the sugar and the pie set up perfectly**

Blueberry Cream Muffins

Giving these a 4 & 1/2. I cut the servings down to 12 and used more cream cheese then called for. As for the muffin part? Good! They did NOT get "browned" on top but they were done...no biggie to me. I think I will add vanilla next time? As for the filling? As stated I increased the cream cheese a bit but did not alter the sugar called for and I added a bit of lemon zest and juice since that complements the berries well. Different, good and easy. BUT....just a tad short of a 5 star. In WILL make again and tweak it a bit more. THANK YOU for posting this.
