Mother of three teenage boys and an always hungry husband. When I'm not working at the salon doing nails I like to make glass beads and jewelry. I'm always looking for fast but easy and tasty meals to feed my family. Something I can put in the oven to take care of itself while I go make beads.
My favorite things to cook
Casseroles, soups anything I can throw into the crockpot. Hate to fry anything. Not because of the fat but because it's usually messy and you have to constantly watch it. I like set and forget it kinda of cooking.
My favorite family cooking traditions
I love cooking for my family at Thanksgiving and especially Christmas. I love to stay home for two days in my pj's and do nothing but cook. This is almost the only time I bake goodies. We have leftovers for days!
My cooking tragedies
When I was first married (23 years ago) I wanted to make a chocolate pie for my husband like his grandmother. I followed the recipe and the pie looked perfect. Crust was perfectly brown. However, when you tried to slice into it, it gave some resistance. It was gooey in the middle. This was when you bought two pie shells in one pie pan, seperated by a sheet of wax paper. I didn't know this so I had a nice crust on top and on bottom but gooey dough in the middle with wax paper in the middle of the pie too!! I haven't tried making a chocolate pie since then. I think I'll put it on my Christmas list to make this year!!

Yummy Sweet Potato Casserole
This is a must have on our Thanksgiving table. I do bake my potatoes as others have said, it does make a difference. If you really want to impress your company add a tablespoon of frozen orange juice concentrate to your mixture before adding the topping. Don't use regular OJ it makes the mixture too runny. Yummy!!!

Creamy Chicken and Wild Rice Soup
One of my favorite soups to make. I add cooked chopped broccoli to mine. Yummy and easy. Serve with oyster crackers.

Waldorf Salad II
I make this every Thanksgiving. Good as a side dish or a lite dessert. I do soak my raisins in water for about ten minutes-this softens them.
