Addictive Sweet Potato Burritos

I think next time I make this I will add a little more sweet potato and a little less of the bean mixture. I did 1/2 of each and the bean mixture was overpowering. I would also cut down on the chili powder because that is all I could taste. Will try again because I love sweet potatoes, but hope it comes out better with these changes.

Cobb Salad

This is a hearty salad. I added a few cashews to it and used the ranch dressing you make (adding buttermilk and mayo to it). My husband gobbled it up.

Winter Fruit Salad with Lemon Poppyseed Dressing

Awesome! After reading some reviews, I decided to make this salad exactly as called for. There are so many feta/apple salads out there...I love the concept of cashews and swiss cheese. The dressing is refreshing (a bit like lemonade). Thanks for a keeper!

Cha Cha's White Chicken Chili

This was really good. I wanted a bit creamier version so I substitued one cup of cream for the broth and it was great (makes a huge pot so I wasn't too worried about the extra fat content). **Warning** this is spicy! My husband and I love spicy and I only used 1/2 the cayenne based on other reviews...it was almost too much. I would cut down the jalapenos and cayenne if you don't like too much kick. Otherwise, great meal served with warm cornbread or rolls. Thanks!

Fettuccine with Sweet Pepper-Cayenne Sauce

Delicious! Very tasty for such an easy recipe. I added sweet onion and a splash of white wine to the sauce, and topped off with crumbled bacon and a little more parmesan cheese. Served with warm Rosemary bread. Will be a regular in our home. Thanks.

Cheesy Ham and Asparagus Bake

This was good...but if I made it again, I would add the cheese to the mixture instead of sprinkling it on top. I think it tastes better blended into the casserole instead of a hard layer on top. Just a personal preference. Otherwise, had good flavor.

Delicious Black Bean Burritos

Delicious! Great recipe!!! I've also used smokey black beans (by adding some brown sugar, honey and liquid smoke to the mixture) and it's very good that way also. This will be a regular in our house!

Faux Jerk Chicken

I'm so glad I found this recipe. It was very tasty. I had a rotisserie chicken that I used (tasted great and saved time) and I couldn't find the scotch bonnet pepper so I used a jalapeno instead. It was fabulous. I served it over a hot baked sweet potato and the combination of flavors was incredible! Try it!

Whit's Chicken Enchiladas

I thought this was good...but there was so much chicken that it overpowered the other flavors. I would use a little less chicken, add a few spices to it, and definitely top with salsa and/or guacamole next time. My husband enjoyed it and ate it up so I would give it 4 1/2 stars if I could.

Hash Brown Apple Pancake

I have to say, this recipe had me intrigued by its ingredients...wasn't sure how it would taste with apple, potatoes and swiss cheese!!! I was very impressed. Even my husband loved it. I did saute the onions first (personal preference) but other than that, followed the recipe exactly. It was a little hard to turn the pancake without it falling apart, so I would use a wider skillet next time. But it was very tasty and I will definitely make it again.

Brie Cheese Appetizer

Have made this several times and it's AWESOME!! I always use extra apricot preserves and add sliced almonds, and top with the brown sugar (over the egg whites). Serve alone or with crackers. So tasty!

Wonderful Short Ribs

After browning the ribs and sauteeing some onion and garlic with them, I put everything in the crock pot (including some parmesan cheese per another reviewer)and just let it slow cook for the afternoon. I served it with Pasta with Fresh Tomato Sauce from this site. Very Tasty.

Sausage Stuffed Jalapenos

Served these as an appetizer and got so many compliments. I split the cream cheese/sausage mixture in half, and to one half I followed the recipe exactly, to the other half I added sharp cheddar cheese instead and then coated them with crunched up rice krispies (for a crunchy texture) and they were excellent. Both were amazing! The ranch dip is awesome with it! Definitely a keeper!

Delish! Definitely saute the onion. I also like to add nutmeg and halfway through cooking, I add thinly sliced red bell pepper on top. Looks pretty and tastes great. A keeper.

No Bake Chocolate Oat Bars

Used 3/4 cup butter, 1 cup peanut butter (our family loves peanut butter) and added some shredded coconut to the oatmeal mix. Pretty tasty for the time it took to make (about 10 minutes). Makes a lot of bars.

Chicken Cordon Bleu II

Great cake! I followed the directions exactly, and then drizzled blueberry and spice sauce (from this site) over it along with fresh blueberries and strawberries. My guests raved. Will make again!
