7-Layer Meatless Tortilla Pie
Simple, easy to modify to your own tastes, and I probably wouldn't have come up with it on my own. I topped it with mild salsa and sourcream. My kids are eating it as I write this! Thanks!

Old Fashioned Paradise Pumpkin Pie
This came out wonderful, even better the next day. I probably served it before it completely set, but it had a wonderful flavor....of course, I add a little spiced rum to my pumpkin puree for a little kick. Wonderful!
