Jeannie's Famous Potato Hamburger Casserole
I made this last night and really didn't like it at all. Even with lightening up the recipe as per another reviewer, I thought it was too rich. I also was not able to get the roue to gel and got lots of little flour clumps. I probably won't make this again.

Apple Spice Cake
My daughter went apple picking and I'm not crazy about apple pie so I was looking for something different. This was an awesome recipe. I especially loved the mix of spices and that you could taste them all. It was more like a spice cake with apples than an apple cake with spices. I did lighten it up as a previous reviewer did and used 1/2 & 1/2 on the AP/WW flours and applesauce/butter. I made 2 loafs instead of a bundt and added walnuts to one of the loafs. It was definitely better with the walnuts. Next time I want to use egg substitute instead of 4 whole eggs as I'm watching my cholesterol.

Grilled Tilapia with Mango Salsa
This was great! I used mahi mahi instead of talapia because that's what I had in the house. The mango salsa disappeared. The fish was nice and juice and I loved the grilled flavor. Since my fillets were frozen I marinated them for almost 5 hours and quick grilled them. Delicious! Made the Herbed Rice and Spicy Black Bean Salad from this site to go with it. The flavors really went well together. Added some steamed broccoli and it was a wonderful summer meal.
