I made this per the recipe and it was way too sweet. I tried it again and used 14 oz. of coconut milk instead of the coconut cream. It was perfect that way, just like I remember from my visit to Peurto Rico. Add a little extra run for kick!

Special Rhubarb Cake
This is an excellent cake!! Next time I will use 3 cups of rhubarb for extra rhubarb flavor. I also added a pinch of nutmeg. The cake is moist and dense, just the way I like it. The vanilla sauce works very well with this cake, but a little goes a long way.

Almond-Raspberry Meringue Bars
These are very good! I especially liked the crust. I also thought they tasted better chilled than at room temp. Enjoy!
