Blueberry Zucchini Bread

Excellent! To make the recipe more low fat, I used 3/4 cup applesauce and 1/4 cup olive oil. Used 1/2 white flour and 1/2 wheat flour. I also only used 1/2 cup brown sugar and 1/2 cup white sugar. Used a crumble topping on top with 3/4 cup sugar, 1/4 cup flour, 1 T. cinnamon and 1/4 cup margarine. Cooked in 2 loaf pans for 1 hour and 15 minutes. If using frozen blueberries, I used 2 cups and let them thaw while putting the rest of the ingredients together. Will definitely make again and again!

Prime Rib

Excellent! I took the advice of others and cooked 6 minutes per pound at 500 degrees since I had a 7 lb. roast. I also rubbed the roast with 1 tsp of each: salt, pepper, garlic powder & onion powder. Will definitely make again.

New England Clam Chowder I

This was amazing! When I cooked the onions, I added 3 T butter and 3T flour to make a roux. Added the water and 1% milk into the potatoes on low temp. I also used turkey bacon and at the end I added thinly shredded carrots for color. Will definitely make again!

Easy Beef Stroganoff

Excellent. Based on reviews, I sauted a sliced onion and 8 oz. of sliced mushrooms in salt, pepper, garlic powder & 1 tablespoon of olive oil and removed from pan. In the same pan, I then brown 2 pounds of ground turkey seasoned with salt, pepper and arlic powder and add 1 can of beef broth. In a separate bowl, I mix 1 cup of fat free sour cream with 3 tablespoons of flour with salt and pepper to taste, then add to the meat mixture and let simmer until flavors have blended.

Oatmeal Date Bars

These are excellent! I adjusted to make a little more healthier by using 1/2 c whole wheat flour and 1/2 cup white flour. Used light margarine. Added 1/4 c chopped walnuts. I used raisins instead of dates since I didn't have dates. Just added the raisins right in the mix.. Used 1/2 cup brown sugar instead of a cup.

Hamburger Vegetable Soup

Great, especially the next day. I cut up sirloin in place of the hamburger. I browned the sirloin and added the celery and onion with the steak while browning...then added the rest of the ingredients.

Hearty Ham Casserole

Very good. I wanted to put this together quickly so added tator tots instead of potatoes. Also added a little more milk since I used the tator tots. I also used steamed green beans instead of corn since I didn't have corn. Next time, I may use frozen hash browns instead.

Pumpkin Cookies I

Great cookies! I try to make the recipe as low fat as I can. I used 1/2 c of applesauce instead of oil, 1 cup of butterscotch chips, one small can of pumpkin and 2 tsp. of cinnamon - these are very good and I will make again!
