Creamy Chicken and Wild Rice Soup

Will definitely make again. To make healthier, used 1/2 c whole wheat flour instead of white flour and used 4 T of butter. Also used 1% milk instead of cream and the soup was still thick. To help with a little flair added cooking sherry, sauteed onions, garlic and shredded carrots. Family of 5 loved it and it was all gone in one dinner.

Breakfast Casserole I

I would prefer this without the bread and maybe used croissant dough instead. Used turkey sausage instead of bacon and added green peppers and onion. More cheese will be added next time.

Simple Artichoke Dip

Very good. I used Hellman's light mayo and thought it came out tasty. I also added 1/2 tsp garlic powder and 1/2 T of lemon juice and worcestershire sauce based on another review. Also used the shredded parmesean cheese.

Pasta Salad with Homemade Dressing

Great dressing for any pasta but I used whole wheat penne for mine. I used 1/2 c of red wine vinegar and about 1/2 cup of parmesean cheese. To make a quick lunch I warmed up a bag of frozen stir fry vegetables and a roma tomato and kept the salad vegetarian. I didn't have mustard seed so used ground mustard instead. A little more salt was needed for my taste. Again, very good and I will definitely make this again.

Double Crust Stuffed Pizza

Easy and great recipe. In order to make it somewhat healthier, I used 1 cup whole wheat flour & 1 cup of white flour. Family loved it and it gave the crust more taste.

Chewy Peanut Butter Cookies

Very good cookies. I didn't have shortening so added 1 cup melted butter instead. I also used 1 tsp. vanilla & 1/2 t. salt; and only used 1 egg.

Crispy Chicken Strips

These were fantastic! I ut chicken breast into strips and baked these instead of frying them. I spread a little canola oil on a 9X13 Pampered Chef stone pan. Then drizzled a little olive oil on the top of the strips and baked at 400 degrees for about 20 minutes....my family loved these!

Cream Cheese Frosting II

Great recipe. I reduced the fat by using 1-8 oz lite cream cheese; 1/4 c light margarine and 1-1/2 tsp of vanilla. What a great option when you need a cream cheese frosting with less fat.

World's Best Key Lime Pie

This is wonderful. I always get asked for the recipe. To decrease the fat, I make my own crust & use light margarine for the crust and use fat free condensed milk & fat free cool whip for the pie filling and it's still wonderful; no one knows the difference.

Cinnamon Bread I

FABULOUS!! This bread is wonderful! I substituted 1/2 c of whole wheat flour for 1/2 of the white flour and applesauce instead of oil. While pouring the batter, I added the suggested extra topping to the middle of the batter. I will definitely make this again! My family thought it was wonderful bread.

Pancake Stack with Syrup

These were terrific and what an inexpensive way to make pancakes. I won't be buying box anymore. The only change that I made was only added 2 T. of canola oil and used 1/4 cup of batter. Cooks quickly, so very fast to make. Thanks for the terrific recipe!

Extra-Easy Spinach Lasagna

Great recipe! I also added sauted onions, carrots & zucchini and used a jar of spaghetti sauce. Also replaced the ricotta cheese with 1% cottage cheese to try to reduce the fat content. I will definitely make this again!

To Die For Blueberry Muffins

These were wonderful. I always try to decrease the fat content of recipes so on this one I used 1 c of whole wheat flour & 1/2 c of white flour and reduced sugar to 1/2 cup. Instead of oil, I used applesauce. For topping used light margarine and 1/2 whole wheat flour & 1/2 white flour and my family still thought these were great. (I also doubled the recipe and made 24 muffins.)

Loose Meat on a Bun, Restaurant Style

Great recipe. After cooking the meat, I put it in the crock pot on low for about 4 hours to keep warm and it had such a great taste and texture. I used left meat the next day for nachos.

Beer Dip I

Great recipe. I modified to try to reduce the fat by using 1/3 reduced fat cream cheese and added one cup of fat free sour cream. I also added 2 chopped green onions and some crushed red pepper.

Soft Oatmeal Cookies

Great recipe. To decrease the fat, I used 1/2 whole wheat flour & 1/2 white flour and instead of 1 c butter, used 1/2 c apple sauce & 1/2 c low fat margarine. But then I also added 3/4 c. each choc chip & raisins. Also, instead of making cookies I spread the dough in 16x11 pan. Cooked for 25 minutes and it came out great!

Pumpkin Chocolate Chip Muffins

Great recipe! Used 1/2 whole wheat & 1/2 white flour. Also used 1 egg & 3 egg whites. Used 1/2 c white sugar & 1/2 cu brown sugar. Used all applesauce instead of using canola oil. Also added 1/4 c chopped pecans. Made 12 large muffins.
