Holiday Cranberry Chutney

Cranberry Pot Roast

This was excellent. Just a hint of sweet and sour flavor. The only thing I changed was the amount of liquid. Cutting the amount in half still gives you plenty to make gravy. Also added a bit of garlic powder.

Savory Sausage Bread

Lemon Pineapple Dessert

Way to sweet! Used 20 ounce can of lemon pie filling and unsweetened pineapple. Eight ounces of sweetened condensed milk would have been more then enough. Great dessert if you have a sweet tooth.

Sausage Cabbage Bake

Very good recipe, with a little tweaking. Like others, added one can diced tomatoes and one can tomato sauce. Also, added extra cup of cabbage and one cup of ketchup. If you like stuffed cabbage you will like this casserole.

Coconut Pineapple Pie

Took the advise of another reviewer and used pineapple with heavy syrup and half the recommended corn syrup then replaced the other half with creme de coconut. I also, reduced the sugar to 3/4 cup and toasted the coconut. Comes out picture perfect with a great tropical flavor.

Too Much Chocolate Cake

Made this with a couple of additions. To the water added one tablespoon instant espresso coffee. And, to the batter, folded in a half cup of toasted coconut. Awesome!

Layered Eggplant Hamburger Casserole

This was good, not great. 1/3 cup dried parsley was a bit much. Used the same amount of fresh parsley. Reduced the water by half and used 1 T Italian seasoning instead of the thyme, oregano and basil. Also, eliminated the onion layer. Needs salt and pepper.

Very rich, but good. Added 1/2 cup shredded Gruyere cheese and 1/2 tsp thyme to egg mixture. Also, increased the cheddar cheese to 1/2 cup.

Chicken Hurry

Very good, quick and easy. The ketchup taste was a bit much for my taste. Doubled the sauce but used only one package of the dry onion soup mix. Also, added a small chopped onion and two cloves of garlic. Will make again with the addition of a small can of crushed pineapple.

French Spring Soup

This soup was very good with a few minor adjustments. Replace the water with either low sodium vegtable or chicken broth. I also, added one tablespoon chicken broth granules for added flavor. Reduce the salt to one teaspoon and the heavy cream to 3/4 cup. This soup is a complete meal with a loaf of warm Artisan bread.

Easy Broccoli Quiche

This quiche came out picture perfect and the texture was great, but that's were it ends. It was way to bland even with the addition of extra garlic and a tsp of Italian herbs. Perhaps using a mixture of mozzarella cheese and cheddar would give it more flavor. Also, the broccoli tasted bitter and it needed to bake 45 minutes.

Strawberries and Cream Bread Pudding

This was very good. Did add more strawberries then what the recipe called for and added 1/2 teaspoon strawberry extract for additional strawberry flavor. Will try this recipe with other fresh fruit.

Hearty Corn Chowder

I was disappointed with this recipe. I love dill, but it just didn't seem to go well with this chowder, if fact some of the other ingredients didn't work well with it either. The bacon got soggy and the evaporated milk made it a bit to sweet. Will not make it again.

Pear Honey Cranberry Sauce
