Angela's Awesome Enchiladas

I doubled the recipe and used low fat sour cream. It turned out GREAT. Didn't look like enchiladas. I gave some to a friend, and after he tasted it, he knew what it was. It's just because of the sauce and cheese, doesn't allow the the enchiladas to present itself. Looks more like a casserole. It's a keeper. For me, I like it a little spicier.

Sweet Potato Pie I

Never made Sweet Potato Pie before, and always wanted to. This was AWESOME!!! My neighbor brought me a crate of sweet potatoes from the field, I made 10 pies. Passed them out to neighbors, and coworkers, they all LOVED it. Did make a few adjustments to the recipe, I followed it basically. I used 3 large sweet potatoes, 3 eggs, 1/4 tsp. ground clove 3/4 tsp. ground cinnamon, 2 teasponns of lemon juice. This was enough to make 2 pies (not deep dish). Only had 1 friend say it was OK, he didn't like the texture. But then he doesn't like Sweet Potatoes either.

Pudding-Topped Fruit Salad

I used low fat vanilla pudding. I added 1 can of drained mandarin oranges, 1 can of drained peach slices, chopped up 2 large red apples. Didn't add the blueberries. No mint. This is a very refreshing recipe. I poured the pudding on top, thinking it would sink to the bottom, it didn't. So I mixed it up. This wil a recipe for summer BBQ's and potlucks. Thank U!!!

Ham with Pineapple

Never made ham before. Got a bigger ham. I used a crock pot/slow cooker, because there simply wasn't enough roon for my turkey and ham in the oven. Cooked on high for 1 hour, and low for 4 hours. I used 20 ounces of 7 UP. I used 15 cloves (didn't know if they would soften up, and YES they did). I did use a toothpick for the cherries and pineapple. The ham meat fell off the bone!! Next time I will not use the toothpicks. So, I won't have to dig into the meat for the toothpicks. Very tender, very tasty, thank U!!

The Best Potato Salad

I used more dill pickle relish, no celery seed (didn't have any) no pepperoncini, nor black olives and used 1 tsp salt. Did add 4 pieces of chopped celery. When I made the mix, thought it had too much mustard, but when finished with the recipe, it wasn't.

Classic Stuffed Turkey

Thank YOU!! My picky girl even loved this recipe. I tripled the recipe, the stuffing inside the bird was very moist. I put the rest into baking pans, it came out a little dry, will add more water for the baking stuffing next time. I didn't have any parsely and we didn't use mushrooms. I used 2- 7 ounce package of dried croutons.

Easy Turkey Gravy

Amish White Bread

Bread flour? I didn't know what that was. So, I used All Purpose Flour. Followed the recipe, Tripled it. Gave out loaves to my neighbors, and co-workers. They all raved about it. One said he sliced 3 pieces, nuked it in the mircowave, and then added butter to it. He said it was so delicious. He wants the recipe to give to his mom.

Classic Chicken and Rice Soup

This is a keeper!! I didn't want to go to the store so I made alternates. I used 5 1/2 chicken breasts, which I boiled, and kept the chicken broth from it. I added a couple of Tablespoons of Chicken Boullion to the broth. And I used 3 quarts of broth, instead of 2 quarts of broth and 1 qt. of water. I had left over spanish rice, so I used 3 cups. And last but least, instead of peas, I used green beans. It's a winter dish, and yummy.

Banana Nut Bread Baked in a Jar

Awesome recipe. Tried it for the first time. When it says, fill 1/2 jar with batter, DO IT. I filled 3/4 and it was baked over the top of the jars. I poured the bread out, wrapped it, and hand it out to neighbors, and they loved it. Also, placed on racking for baking, the jars tipped to one side. Next time will try putting them on baking sheets.

Best Tuna Casserole

I haven't had tuna casserole in probably 15 years. This was good. I did read the reviews of others. I used 16 ounce of egg noodles, 18 ounce tuna, used 40 ounce of cream soup, and added 1 cup of milk. I believe next time, I will not add the chips to the top. THANK U for sharing, It's a keeper.

Three Ingredient Peanut Butter Cookies

I got this recipe off a motorcycle forum. I surely thought there were ingredients missing. I had to try them out. I was pleasantly surprised on how they turned out. Hubby and kids loved them. I, now triple the recipe.

Italian Spaghetti Sauce with Meatballs

I've made this a few times. I never would of guessed that my family, especially my picky girl would know the difference between this and the bottle sauce. They did. I now, can no longer use bottle sauce. When I do, I can expect some complaints. This is a recipe going into my recipe book. Thanks for sharing.

Brown Sugar Meatloaf

I doubled the recipe, except the brown sugar, just used 1/2. Also, used 1/2 of the milk. Used dry onion soup mix, instead of onions. I used bread instead of crackers. I added about 4 splashes of Worcestershire Sauce to the mix. Put 4 more splashes on top of the meatloaf, topping that with brown sugar and ketchup. Turned out great. Hubby even ate 1/2 of the loaf, before we all went to bed, and my picky son, liked it. Hubby told me to keep this recipe. Thank you, for sharing.
